I was looking at my MFP diary and while I'm staying within my calorie range, I'm going way over with carbs and sodium, mainly from processed food, so I'm going to try to work on that. Anyone have any good ideas for work lunches? I'm currently having Smart Ones, which are really high in sodium. And I need some snack ideas besides yogurt, fruit and veggies. My other go-tos during the week are granola bars, which I need to get rid of because they are high in sugar, and microwave popcorn.
For lunch, what about a salad with a lot of protein? Wrap sandwich or pita with a protein filling? Burrito bowl (make the ingredients on the weekend and make a bowl for lunch), homemade soup (make ahead for the week).
Snacks: cheese, almonds, jerky (I think you're a vegetarian, though), Greek yogurt, protein shake, hard boiled eggs.
Have you ever tried making your own granola bars? That could be a way to cut down on sugar but still have a convenient snack. I've never tried but I think I might try.
I alternate between salads with either chickpeas or 2 hard boiled eggs for lunch and soups. I have a container that MIL got me that's microwave safe and has a spoon/fork that fits into the lid.
Of course, right after getting back from Easter I started feeling really sick and haven't had the energy to cook much so my diet has taken a nosedive this week.
I'm going to start a modified version of carb cycling next week. I can't be super-strict about it because there aren't a ton of vegetarian proteins that don't have carbs in them (all veggie burgers, veggie crumbles, etc. have carbs of some sort) and I don't want to give up my morning coffee with cream! I'm hoping it'll help me eat fresher food and reduce my carb and sodium intake.
Do you beat them all together then? Is the egg just raw?
Pretty much. You mix some of the oil, then drizzle the rest in very slowly while you mix so it emulsifies. I guess the best way is in a jar with an immersion blender, but it worked pretty well in my stand mixer. The egg is raw, so a little risky. I used it in potato salad earlier in the week and then in a buffalo chicken casserole that was cooked.

Oh, and just posting this because it's one of my favorite recipes - it's an alternative to chicken salad - no mayo, using avocado instead. I've eaten with tortilla chips, in a wheat wrap and also using lettuce to make wraps. It's one of my favorite summertime meals.

Today is my first official day trying it. It's hard as a vegetarian because a lot of meat alternatives have carbs and fat in them so I'm doing a modified version of it. And I'm still drinking coffee and using Equal. We'll see...

Been on a bit of a hiatus from TCF, but this post caught my eye! I signed up for Weight Watchers and began the first week of February. So far I have lost 23 lbs. I'm 5'4" and started at 188 and am now at 165. I have always been a bigger girl and struggled to lose weight, but WW's SmartPoints system has really opened my eyes up about portion size and has helped me to make better choices on what I am eating. Plus, you can sync up your fitness tracker to the WW app and it will log your FitPoints. So far my focus has been on my food but I have begun incorporating some exercise (like walking on the treadmill at lunch at our work gym and going for walks with the kiddos in the evening). I've run a few races (it's been quite a few years!), but the distance I liked best was a 10k...a bit of a farther run, but not as much of a commitment as a half marathon. I've been thinking about finding a race to sign up for later this summer in hopes that it will be motivation for me to get up and move!
I'm nursing so I just want to eat healthier and maybe these 20 extra pounds will start to come off. I'm trying to get my 5 serving of fruits and veggies. Not buy junk food.
I need to figure out how to get a work out in. It's hard to even go on walks with crazy toddler and little baby. Toddler is the issue.

The first can I bought I thought was a horrifying mistake, but apparently it was supposed to be like that - they say it adds flavor and nutrition and you can't tell when it's cooked - I didn't bother to find out. My running buddy is trying to talk me into doing a half tough Mudder... I did a full right before I found out I was pregnant with DD and I survived but I was in much better shape strength wise. This one would only be half one though and maybe it'd force me into doing more strength training.

This week my fats have been mayo (in my tuna), olive oil (in my stir fry), string cheese and egg yolk. I think for protein, I'm going to try a protein powder and make smoothies or use it in oatmeal on high carb days. And get some fish for dinner.

I saw a recipe thing that was essentially tuna salad in pickle boats. You carve out a bit of the pickle after you cut it length wise and put the salad in there. Same with cucumber too.

I would never bring it to work, just for dinners. The problem is that DH doesn't really like fish except for breaded fish, like fish and chips, so he's not going to eat whatever I cook, so I'm going to have end up cooking one version with healthy fish and one with breaded fish. I'm going to see what options there are when I go grocery shopping this weekend.
