I don't know what to do with the chicken thighs.
I'm working on ours right now. Need to see what's on sale at the supermarket to see if that helps give me any inspiration, because right now I don't have any.
I like this recipe for chicken thighs - One Pot Chicken, Rice, and Vegetables. I use boneless chicken thighs, and brown rice - I add a little more chicken broth because brown rice needs to cook a little longer. However, this makes the chicken thighs shred when you stir things to keep them from sticking and with the brown rice it actually makes a nice little sauce, so it's like a bowl meal instead of what the picture on the website looks like. (I may be doing it wrong, but it tastes good so I don't care lol.)
OK after a decent nap I finally finished (ps bradysalon, I totally borrowed one of your ideas!):
Monday - dinner out (we do pub trivia and eat there, I will try to be healthy) Tuesday - Pasta (H cooking, yay!) Wednesday - leftovers Thursday - Salmon, mashed potatoes, & green beans Friday - Grilled cheese and soup Saturday - pork loin with stuffing and peas Sunday - slow cooker pulled chicken and corn on the cob
Going to use the weekend leftovers for lunches a few days next week, too.

I'm trying to stick to this but we'll see how I feel this week. Monday--tortellini, salad and garlic bread. Tuesday--black bean and sweet potato tacos Wednesday--chicken and broccoli stir fry Thursday--Indian red lentils and cabbage with rice and raita Friday--home made pizza

You guys are my heroes. I have wanted to meal plan for years and have never been successful. I waste too many groceries letting half of something go bad (head of lettuce and half an onion this week) because I don't plan ahead. I'm going to make this my very belated New Years resolution.

tez I have to meal plan or we would eat chick fil a and pizza every day. Between both DH and I's schedules and having a toddler- meal planning is a must.
