Monday -grilled burgers Tuesday- Mexican chicken and rice with salad. Wednesday - roast, potatoes, carrots, green beans, rolls Thursday - leftover Friday - pizza for DS birthday party Saturday -out for a derby party.
Well everything planned last week didn't actually happen so...lets try this
Mon-Either leftovers or quesadillas Tues-chicken tacos via crock pot Wed-salad with chicken??? Thurs-shrimp pasta Fri & Sat it's just DD and I so who knows what we will decide to do
We started ours over the weekend because of a busy week this week. Sat: Cauliflower Fried Rice Sun: Chicken Parm/Broccoli/Noodles Mon: Leftovers Tues: Zoodles and Meatballs Weds: Meeting for me, leftovers for the fam Thur: Hockey for H, leftovers for the rest of us Fri: Probably still leftovers
Lunches this week are skinnytaste stuffed pepper soup
I made chicken and broccoli for the fam before departing for NY - and left meal instructions for each evening. They are going to eat fast food. I was on the stairs when DS said to DD "mommy is out of town this week so we don't have to eat healthy!!"
M: Crock pot turkey sausage, green beans, and potatoes T: Ham, sweet potatoes, and veggie W: DH is out so the kids and I will probably have brinner R: Salmon, cauliflower rice, veggie F: Bell pepper nachos S: Chicken sausage, sweet potato fries, and Brussel sprouts
Seems like an appropriate place to put this. I have found the easiest quick meal and I can't believe I hadn't thought of it before.
Meatball subs.
WalMart's Great Value brand "Homestyle" meatballs are surprisingly delicious. They cook up in the microwave in like 3 or 4 minutes - just enough time to heat a jar of marinara sauce on the stove. Dunp the meatballs in the sauce, stir and pop on sub rolls or hotdog buns. Serve with dippin' veggies to round out the meal. Seriously a 5 minute meal.
Mon - grilled pork loin, brussels sprouts, mac-n-cheese Tue - chicken and broccoli alfredo Wed - SunBasket Meal (sunbasket.com/recipe/salmon-with-piquillo-pepper-and-cucumber-salsa), I'll review it below for those interested in trying a new meal plan service. Thu - SB - steak fajita lettuce wrap with guac Fri - SB - Thai green chicken curry with jasmine rice
Ok- Sunbasket Salmon review
Prep - Easy, Minimal.
Taste - super yummy. I was nervous, because I was expecting to not like this. I've always hated cilantro (and corriander), but have "trained" myself to tolerate it over the past 2 years. Anyway, I was also skeptical about having the warm cooked fish and veggies, plus a sauce, plus a cold salsa (with raw cucumbers). Surprisingly, it all went together really well, and was very, very flavorful.
Portion size - decent! The salmon fillets were 6oz each. I probably gave L a third of mine. Granted, Idid stuff my face with trail mix an hour later, but I think I just have a wild appetite. My H was satisfied with his portion. There was some leftover sauce (a cilantro-mint-chutney), I ended up using it as a marinade for some chicken that I needed to cook up.
Based on this meal alone, I'd consider switching from Hello Fresh to Sunbasket. BUT, Sunbasket is $10 more per week (or about $1.50 more per plate). HelloFresh is decent, but I find a lot of their meals to be bland. Plus, their customer service is shit.
Anyway, I've paused both services for a the next few weeks and will probably try Plated and Blue Apron (to use the first timers' discounts!)

A couple of weeks ago, I said we should have Taco Bueno bc we haven't had it in ages, and DD moaned, "We ALWAYS eat Taco Bueno when you're out of town." Busted by a 4 yo, DH!
This week we had a great plan until I got called to Seattle. It was:
Tacos Spaghetti Crockpot Lasagne Soup (new recipe) Lemon pepper chicken Crockpot BBQ chicken w cheesy ranch potatoes
We had BBQ on Monday and are having the soup tomorrow. I'm sure there was Taco Bueno and likely Schlotzskis while I was gone.
I'm going to be the out to eat parent this weekend while DH is having boys weekend. But...DD has a 4:30 final review for the chiropractor on Friday for the insurance and Saturday we have a 5pm riding lesson and Sunday we pick up our minor league season tickets at Buffalo Wild Wings at 5 so going out is the practical solution.
Friday-Izzy's as she won a free meal for minutes read at school and I will just eat Salad bar Saturday-Mongolian grill as take out and enough leftover for lunch for me Monday Sunday-Buffalo Wild Wings-whatever they have for us season ticket holders...
