We are doing sweet italian turkey sausage skillet tonight. That's all I have planned so far. Feeling like I should get to meal planning so takeout doesn't ruin our budget this week.

I did something like this but the recipe came from my brain LOL and I used goldfish crackers crunched up instead of cheddar cheese and breadcrumbs. SO good!

azieber 's comment made me think, how often do you guys go to the grocery store? I love having a stocked fridge and pantry but I feel like I would need to go to the store once a week to keep it that way. Ugh, this deep thought is mostly because I need to go to the store and am putting it off!
Tonight is colorful chicken risotto. Then I think we are having BBQ beef mixup tomorrow. That's as far as I've gotten for meal planning this week.
What is bbq beef mixup?
It's beef rice a roni, mixed with a lb of ground beef, 2 cups of corn, a 1/2 cup of BBQ sauce and a half cup of cheddar or Mexican blend cheese. Brown the beef, drain and set aside. Cook the rice a roni as per package directions in the same pan, when you add the seasoning pack add the corn as well. When rice a roni is done, add beef back in and bbq sauce. Stir till warm and incorporated. Remove from heat, sprinkle cheese on top and let stand for 2-3 minutes until cheese is melted.

I go once a week. I try to send fruit and veggies in for Declan's snack so I have to get those. Plus I'm weird about defrosted meat so I don't like to buy in bulk and freeze. It's stupid, but I feel like the texture changes.

I go to the grocery store once a week to restock the fridge with produce, yogurt, etc. I might get a few pantry items if I see we're out, but we don't go through that stuff as much as produce and perishables.
For dinner tonight will probably be pork chops with potatoes (smashed or roasted, probably) and green beans. Also on the menu this week is beef stir fry, and chicken prepared some way. Last night H and I made dinner separately, so I had brown rice spaghetti and he had soft-boiled eggs with toast.

I am trying a new recipe tonight, well sort of encorporating two together to make one I know my H will actually eat since he will pick the onions and peppers out. I will post it once I make it, just to see if its worth sharing or if its a complete bust.

I use to go biweekly but have been going weekly to get fresh fruit and a few staples. I guess it sort of changes. I try to use what I have on hand so I am not letting food go to waste, mostly pantry items bought randomly.

Tonight is chicken sausage with edamame (seasoned with sesame oil and garlic) and mashed potatoes. Wednesday: Going out for dinner Thursday: Maybe breakfast for dinner Friday: Sweet potatoes, Chicken baked and seasoned, and maybe lima beans.
Not at all. I love me some rotisserie chicken. And the leftovers make excellent chicken salad.
Or chicken noodle soup! We always grab one when we are at Costco. Sometimes I swear that Lillie eats an entire chicken breast! She loves it straight off the chicken!

Ok, so it turned out good. I used italian spicy turkey sausage (the link type) and cooked them once i had sliced them. Set aside once cooked.
take 1 tsp parsley, 1 tsp oregano, 1/2 tsp garlic, 1/4 tsp ground red pepper, and 1 tsp basil and mix.
Take 2 small potatoes (i used red), slice thin and cook in the pan you cooked the sausage with, with some olive oil until they are barely browned. Add some cut up onion, red and yellow peppers (i used sweet, you can also use green or orange, also cut them in bigger pieces so they could be picked out for DH). Once cut up, throw in pan with potatoes, add seasoning and cook until veggies are done.
While all that was going on, I cooked some elbow macaroni noodles (all I had on hand). Drain like normal.
Once the veggies were cooked, I added back the sausage to reheat it. Then added the noodles and stirred until well mixed. Salt/pepper to taste.

The summer between H.S and college I worked at a grocery store in the espresso stand next to the deli. If it was slow I would hang out with the deli people and just watch for customers at the espresso stand. The point of this information is that I watched them clean out the fryer several times and I have not had fried chicken since the first time I saw the grossness happen. I will not go into detail but yah, uck!
