Love this idea!! One thing I love is bean salad. So flavorful yet light and packed with protein.
Juice of 1 lemon Fresh cilantro Can of black beans Tomatoes -finely chopped Ear of corn Onion -finely chopped Pinch of salt and pepper. Olive oil
Shuck the corn (fresh is best) In a frying pan cook corn and onions in a drizzle of olive oil over medium heat until corn is lightly browned and onions tender. Drain and rinse the black beans In a bowl combine the beans, lime, cilantro, tomatoes and onion corn mixture. Use a drop of olive oil and mix. Add salt and pepper Enjoy.

When SS had a scouting event a few weeks ago I was lookig for something for dessert that was fast, easy, and would feed a lot of people (180 people attending for pot luck style)
Answer: (sounds gross) Chocolate Dump Cake
1 box moist chocolate cake mix 1 box chocolate instant pudding 1.5 cups of milk mix all together Sprinkle chocolate chips on top Bake @350 for 30min.
Okay, now that I've tried almost every recipe in here, I'm looking for more inspiration! And I'll leave some more as well.
My favorite tilapia recipe Season tilapia filets with salt and pepper, then dredge in whole wheat flour. Heat some oil in a skillet over med-high heat, then cook filets about 2 min per side. Set filets aside, turn heat down to medium. Add 2Tbsp butter to the skillet. When it gets foamy, add 1 1/2 tsp sage and a bunch of grapefruit segments and turn off the heat. Pour all this over the filets and serve! Quick, easy, and delicious.
I also like to make our dressings from scratch. Here's a ranch: 1 clove pressed garlic 2 finely chopped chives 1/2 c buttermilk 1/2 c plain Greek yogurt 1Tbsp lemon juice 1/3 c chopped parsley Whisk it all together and it stays good in the fridge for up to a week.
I made this for the first time last night, and it was pretty good. I used sausage instead of burger, and I used flat no-boil noodles. I also used a bit of provolone on top because I ran out of mozzarella. Next time I might try it with shredded chicken.
I split it between two pans and froze the extra pan.
ETA - to make this healthier, eat a huge green salad and pretend you aren't eating so much cheese.
And I'm making this right now. It's a pretty decent recipe, but I cut way back on the sugar. I also halve it. (I hope I didn't post this before. Ha! It's one of my go tos because it's easy)
ETA - I blended about half of this to make it smoother. I also didn't use as much sherry. Pro tip - don't use cooking sherry. Gross! Just use regular sherry or really dry white wine. It's also fine if you skip it altogether.
And obviously serve with grilled cheese on artisan bread. Duh.

Tried this last night! I did make the sauce, because I like to do that, but I omitted a couple steps to make it faster (didn't brown the Panko, or process the tomatoes) and it was delicious! I agree it needs an extra 10 to bake. So many of these recipes have made it into regular rotation in our household- you all are great inspiration! And where is MrsAdventure?

Another favorite is easy chicken pot pie. We usually make 2 pies because DH eats one whole one by himself lol. We also tried with turkey and it was amazing! This is probably the easiest recipe I own
-1 cup all purpose baking mix -1 can of cream of chicken -1 cup of chicken (cooked) I like to boil it for a quick healthy option -1 2/3 cup-bag of frozen veggies- I like store brand broccoli, carrots and cauliflower mix -1 egg -1/2 cup of milk
Preheat oven to 400 - mix Chicken and frozen veggies in a glass pie plate. -mix egg, all purpose baking mix and milk together in a bowl -pour over chicken and veggies. -bake 30 min or until golden brown -mix, egg and baking mix
Also- I just got a cast iron Dutch oven. What should I make in it first?
Bread! Yummy bread. Or, if you love soy and ginger, I do a pork butt in loads of soy sauce, ginger, garlic, and brown sugar (and chicken stock). Then serve it over noodles and garnish with cilantro, green onions, and Sriracha. I never have leftovers.

Cilantro Sour cream - easy fresh and delicious side for mexican dishes. My DH came up with it and we use it every week.
-Fresh cilantro -a slice of lemon or lemon juice - 1 cup sour cream ( I like to use light to help cut down some calories)
Put the sour cream in a small bowl Finely chop about a handful of cilantro sprigs. Add the sprigs gently folding into the sour cream. Take the lemon slice or lemon juice and add 2 -3 drops. Mix it up Enjoy!
songbirdsinging55 We do a sister version of this! With Greek yogurt in place of the sour cream, and lime instead of lemon! It goes on so many things, mmm.
My Italian mil is in town (from Italy) and taught me how to make stuffed zucchini (SOOO good)! I thought I would share! Stuffed zucchini Ground beef Half of French bread soaked in water (add only inside no crust) squeeze out excess water Salt, pepper, graded nutmeg, chopped Italian parsley, Parma cheese, eggs (2 per lb) Mix altogether with hands 6 medium zucchini cut top and ends then in half Use potato peeler with jagged edges (lack of a better word) remove insides in circulator motion. Stuff with beef My mil cooks them in tomato sauce. To know if they are done just poke with fork, finished with soft. Simple tomato sauce: sauté onions, add canned tomato (I like peeled Plum) season, cook for about fifteen minutes, then add basil.
This freezes well. If you have leftover meat after stuffing zucchini you can make meatballs to freeze, my mil makes them the size baby cheeseburger patties, and pats them with breadcrumbs. I just wrap in foil and put in a ziplock in the freezer. To cook I put a little oil and fry them in a pan, but you could also put in the oven. I also serve them with fresh lemon juice on top.
Edit: make sure you squeeze out the excess water from the bread!
I made amazing turkey burgers and they were super simple
Ingredients: 1lb ground turkey 2 cloves garlic 1 cup baby spinach 2 tablespoons Panko breadcrumbs 2 tablespoons sir Kensington spicy ketchup (yes I think it needs that brand) 1 egg
I package shiitake mushrooms 1 onion
Sautée the garlic and spinach and set aside once the spinach is fully wilted. In a bowl add turkey, egg, ketchup, breadcrumbs, the cooled sautéed spinach, salt and pepper to taste. Mix and make 4 turkey patties. Pan fry five min per side till fully cooked
In another pan sautée onions for a few minutes in a little butter, add mushrooms, salt and pepper and cook till caramalized and delicious.
Toast the bun, add the burger, mushroom topping and more sir Kensington spicy Ketchup and enjoy!
