lentil cauliflower soup from our new favorite cookbook Oh She Glows
edited to add: I ate a box of shells and cheese by myself at like 3:30 then buried the box in the garbage, and took the trash out. I'm sure thats really well adjusted behavior and not at all food-hoarding.
I love her website! I haven't read her cookbook though.
No idea what's for dinner yet. Probably just leftovers. It's only 5 o'clock here so I still have some time. I really need to get back into weekly meal planning.
I grilled some chicken and made a salad. DH is at a work event so I got to do a salad- he isn't much of a salad eater unless I make chicken Caesar pasta salad.

I love her blog! Been following it for years so of course I had to get the cookbook when it came out. There's a tomato basil pasta dish in there that is to die for! Let me know how to soup turns out!

I somehow read this as strawberry poptarts, and now I really want a poptart... We also have a lot of leftovers because I was starving and indecisive yesterday and made multiple dinners - lentil soup, penne with a creamy marinara, and nachos.

It's super easy! Cut chicken into 1 inch cubes and place them down the center of a casserole dish. Cube potatoes and throw on one side, and add asparagus to the other side. Sprinkle with a packet of italian seasoning (the dry kind, not dressing) and cube up 1/2 stick of butter and place all over the top. Cover with foil and cook at 350 for 1 hour.

We got our first Culvers a month after I was diagnosed with type 2 diabetes! Torture! I did indulge on my birthday and their custard was so good! I had the mint chocolate chip mixer. I think that's what it was called.
