I like Baker's semi-sweet baking chocolate. It isn't super dark chocolate and it is dairy & corn free (as far as I can tell from the label anyways). You can melt it gently and add any diet safe ingredients (nuts, marshmallows, dried fruit, cereal for crunch, peanut butter, etc) and drop by spoonfuls on wax paper to cool (or spread on wax paper and break into pieces when cool like chocolate barks).
I made this tonight and it was great- none of the big allergens are in it. I found an allergen friendly BBQ sauce at WF. I popped some chicken breasts in the crock pot with chicken broth for shredding.
