I don't know the whole 30 thing but can you have eggs? You could pre make eggs in a muffin tin and add veggies if you can have those too. Then just warm them up when ready to eat.
My go to breakfast is roasted sweet potato (make a bunch ahead of time, either whole or chopped) and 2-3 fried eggs over spinach with mayo + hot sauce.
For quicker meals, I'd do dinner leftovers and often add an egg to it or I'd make a breakfast casserole and reheat that. Maybe some kind of breakfast casserole would work for the car? Try Google for more portable whole30 breakfast ideas? Good luck! When are you starting?

Monday! But I stopped Diet Coke completely this week. I had weaned down to 1 a day before but kept saying "tomorrow" on going all the way. I decided I couldn't keep doing that so no diet cokes this week so far! Strong cravings yesterday but I didn't cave. That is a huge victory in itself.
