We haven't done one of these for a while. I'm feeling so burnt out on our usual dinners. I need some fresh ideas. Bonus points for summery crock pot recipes.
I'm on my own cooking dinner most nights - it was hard enough with one kid around, now with two it's a miracle we have a meal sometimes. I usually eat with the 2 year old, have the baby in her highchair, and my H eats the leftovers whenever he gets home. My lack of inspiration for meal planning is making this even more painful.
So. What's for dinner at your house this week, J16?
Also made yogurt marinated chicken thighs on the grill. Can't find the recipe but it was basically 1/2c plain yogurt, 1/4c crystal hot sauce, 4 garlic cloves, 2tbsp olive oil, 1/2tsp garam masala, black pepper, oregano. Mix together. Coat chicken and marinate for at least 8hrs. Grill and devour. (In hindsight I would add salt before putting it on the grill)
Tomorrow I'm making potato gnocchi with mushrooms, corn, and fresh thyme
Our summer go-to crockpot meal is pulled pork BBQ sandwiches
I keep a running list of things I've made and liked on my phone so I don't have to figure it out every week.
My go to summer meal is salad and grilled meat. Also roasted some asparagus, zucchini, red onion, tomato etc the other night and tossed that on a salad. Pretty decent. Also did a mango/red onion/lime juice/maple syrup slaw the other night. It would be great on fish. Or as a side in general. I would add jicama next time for a little crunch.

I love this salad recipe. It's different and refreshing. I added some halved yellow cherry tomatoes to it from our garden. We had it with grilled steaks tonight.

I'm with kcrkcs - grilled chicken and salad is my typical go to. I switch up the lettuces (romaine, red leaf, kale) and veggie additions. I also change up the oil and vinegar dressing for a vegan Caesar dressing
Recipe for the slaw please kcrkcs. That sounds amazing!!!
One mango cut into "sticks" so kind of like cabbage slaw looks. 1/2 or whole red onion diced fine. Salt and pepper to taste Juice from one lime And I added maple syrup to cut a little bit of the sour. As I said I think I would add jicama next time for another texture plus I love the sweet/tangy/crisp flavor. And again all of these things to taste. I am not a recipe follower I just make shit up how I like it so this is just an outline.

Those of you who do salads and also have small kids... Do your kids eat the salad? Dd1 will eat the meat part and that's it. I hate having to cook separate things for her, but also hate just giving her a few pieces of chicken for dinner.
That being said, we love having salads for dinner, too. We often do grilled steak with pickled red onion, sunflower seeds, sautéed mushrooms and goat cheese over spinach. And this salad is hands down one of the best things I have ever put in my mouth:

Dude. It sucks, but it is what it is.
We eat dinner at 5 because otherwise the toddler is asking for snacks every 5 minutes after that. But between trying to cook during the baby's fussy evening hour with a two year old underfoot, trying to eat a meal while usually holding one of them, and then having to clean it all up by myself afterward, I'm pretty much wiped out.

This is super easy. I love the green chile salsa from Trader Joe's (but any would do). Throw some boneless, skinless chicken thighs in a crock pot with the jar of salsa. I usually cook on low. Shred the chicken and then you can have tacos or throw it on a salad, etc etc. Super easy for you especially NellieOleson! I used the crock pot a ton when I was alone with both kiddos while H was still in school in the spring.

I use to wear my dd2 during dinner making time. It helped immensely. Working or not making dinner is on me bc I'm lucky if Dh gets home to eat with us. I try to hold them off, but if he's not home by 545 we eat without him. We use to eat at 445 and I loved that. I hate eating late. (And I realize that's not late for most)

My kids are weird and will eat salad most days. The kale salad at Costco is probably their favorite, but I make salad with all sorts of greens and they'll eat it pretty well. I do let them eat a deconstructed salad with that's more their thing that day. Yesterday's they had almonds, craisins, tomatoes, chicken and crackers for lunch. I had mine over greens, they only had a little kale. If I add candied almonds and craisins that usually gets them interested. They also like poppyseed dressing or Greek vinegrette so I try to use those dressings.
We've been eating "healthier" lately. Both picky eaters so we stick to mainly baked fish and chicken.
I do fish or chicken (I cut nuggets for T), I put them in egg, bread crumbs, then bake in the oven. T ate the nuggets like crazy last time and DH likes that it's not fried but still has some sort of batter. We throw in a veggie with it and call it a dinner. After having an 11 hour work day, I don't have much time for prep work.
For example, last night I picked the kids up, worked out, started cooking, folded clothes while food was in oven, then flipped the fish and folded more clothes, fixed T her plate, fixed my plate, then took G so DH could eat, rested for about 15 minutes then bathed both kids about 7:30, then finally got around to putting up folded clothes and moved the clothes in the washer to the dryer and folded the other load that was in the dryer. FINALLY, sat down for the night about 8:30 with G screaming bloody murder from what I assume is his ear infections so I went to lay down with him to get him to calm down. Decided to try to go to sleep at 9:00 and G woke up for a bottle at 10:30.

We did BLW, too, and dd1 was an awesome veggie eater until about 18 months. Now, as far as vegetables go, she will only eat broccoli. (Steamed only, not roasted.)
She's never been into salads at all, though. She used to call them "leaf" and look at me like I was crazy for putting it on our plates. I'll always give her a small serving to try, but she will spit it out and say "YYYYUCK." Maybe I should try some bottled dressings and see if she likes those? I really dislike most of them, so usually don't have any in the house.
The only time I make her a separate meal is the rare occasion we decide on something really spicy for dinner. Or if H is home, sometimes we will wait until after the kids are down and have a late dinner by ourselves.

Good idea about the ranch dip. My toddler is obsessed with hummus. She calls it "pummus" lol. I wish she would eat it with veggies. She dips it with chips or pretzels.

Tonight I baked boneless skinless chicken thighs with bbq sauce and roasted some sweet potatoes at the same time. We had avocado toast on the side as well. Dd1 and I were both happy. Winner!
