I would love to be a Disney World trip planner, even though this is not a thing. I have so much Disney knowledge and I love helping people plan their trips!
This is a thing. I have 2 secondary acquaintances that do/did this for work
I would love to work in event planning, but not have to work weekends...so basically i would need to open my own company and then not have to actually do any work.
I would happily do some weekend events and PR/marketing for your business! :-)

If I won the tech industry lottery (wealth through working at the right start up) I'd get a food cart or a diner. I would specialize in comfort food, maybe with a fusion twist (did you know that butter chicken 'poutine' is fucking amazing?). And I would have tons of pies. Most of them with lard crusts.
i like everything. Got married and wanted to be a wedding planner. Had a kid and wanted to be an obgyn. Put kid on daycare and wanted to be a caregiver.
in reality I probably have my dream job and love what I do.

Elementary school teacher. Why oh why did I not get my degree in that instead. I think I still have a chance but still. Damn my younger self thinking more about the money instead of what I wanted.

Random, but this is actually doable. I know several people who do this in different capacities.

1- A guy I used to work with who had pretty intense dietary restrictions for health reasons- basically couldn't eat anything. He met a financially solvent person with the same issue. Started cooking for that guy and his family and has branched out some. He still cooks for them but also cooks for other people in the community. If you're vegan, gluten free, and avoid nightshades, he's the guy.
2- went to college, started working, decided she wanted to be a chef. Went to CIA, got job in well-rated restaurant in major metro area, hated it. Moved to a coastal resort town and makes a living a personal chef. She does grocery shopping for families on vacation, or fancy dinners for two at home, hire her to cook for your dinner party- five or fifty people, or she personal chefs for people on vacation.
3- has a PhD, but realized post-education than she had taken the wrong route. Opened a catering company. She mostly does lunch catering for local businesses who want something better than Panera or Moes. She can also do parties, fancy dinners, what have you. She also will put together custom gift baskets of local goods for the recipient of your choice. She works full-time and has several part-time employees.
4-no formal training but started working in fine dining restaurants right out of high school. Married, had kids, and wanted something different. He mostly does in home chef stuff, so he'll come to your house and make your anniversary dinner, dinner party, larger party, kids birthday, what have you. He also teaches in home cooking classes.
