Today is finally my last day alone with the girls. Hopefully tomorrow I can meal plan, we ended up ordering food way more than I'd planned during the last week while DH was gone.
abbeyd, that wild rice quiche looks amazing. I don't know where to get pie crusts here though so we usually do "impossible pies" with the flour mixed in and it kind of forms a bit of a crust on the bottom.

I made a huge nine pound ham for dinner last night, so I'll be using that up for lunches this week. Tonight I'm making a soup out of the bone and meat I was too lazy to cut off around it. I added leeks, parsnips, lentils, garlic, bay leaf/s&p to a pot with the bone covered in water. It smells good. We'll see how it tastes. If I get my rear end off the couch soon I'll make some rolls to go with it.
Otherwise, this week we'll probably do homemade cheeseless pizzas (half red sauce and half pesto sauce -lots of basil to use up in the garden). Also, cornbread and ham/beans, roast/potato/carrots, bunless burgers, and maybe venison chili.
What pot roast recipes do you use? I've never made one before!
The key to a good roast is cooking it longer on lower temps, IMO. I throw my roast in the crockpot with about two cups of water. Chop one onion, some garlic, carrots, celery, potatoes and throw on top. I season with salt, pepper, bay leaves, and parsley. I cook on low all day - put it in at breakfast and leave it until dinner. I usually atir around the veg and spices twice during the day.

I cut up an onion and put the roast on top, then add about 1/2c beef broth, 1T brown sugar, garlic, salt, pepper, 1t mustard, and 1T Worcestershire sauce. Sounds like an odd recipe, but it is really good. Like creepyeyeball add veggies and cook on low as long as you can, about 8-10 hrs.
You guys are making me feel shameful! I love cooking but by time I get home from work we're both so hungry we end up making lots of quick things that aren't ideal (chicken patties, tacos, homemade pizza). The plus about summer is h can grill a lot more. I need to up my freezer meal and crockpot game in the next month.
I never meal planned until the past couple weeks. I realized we were only getting three meals for our budget when we needed to get four, so now I'm trying to be more intentional? We'll see...
