Nutritional yeast is a decent cheese substitute. And if you have a food processor, throw cauliflower in it and shred til rice sized and that works for rice.

I have a good recipe for a quinoa Enchilada bake. It's actually quite good and you can eat it on your own or put it in tacos/burritos. Let me find the recipe.

Ok the website is annoying because it's covered in ads. But this recipe is delicious. I use either ground beef or ground chicken. You can just omit the cheese and the flavors will still all be there. This was one I made for my mom after her knee surgery and she ate it it for days (in burritos, over lettuce, on its own, with a little broth for a soup, etc).

We often have quinoa pasta, so maybe you can still have pasta? There are some good ones. The brand I use the most is ancient grains (I think that's the name). It's in a teal box.

White Chicken Chili

3-4 cups chicken broth
1.5 lbs chicken breast
2 cans Great Northern beans
2 cups salsa verde
2 tsp ground cumin
1 can of corn, drained

Put everything in a slow cooker on low for 6-8 hours or high for 3-4 hours. Shred chicken when it's done.

Top with chopped avocado, scallions, chopped cilantro, and sour cream and tortilla chips if those are okay on the diet.

You can make a yummy cold salad with quinoa by mixing in chopped cucumber, tomato, olives, chickpeas and italian dressing.

I sometimes throw together black beans, corn, and salsa, heated in the microwave for a quick and yummy lunch.

Tonight I made pesto chicken for dinner. Just spread jarred pesto on chicken breast and bake it in the oven. It's delicious. It pairs well with mashed butternut squash (boil the squash and mash with butter if you can eat butter on the diet).

Southwestern Bean Stew over Polenta

2 tsp vegetable oil
1 cup chopped green pepper
1 cup chopped red pepper
1/2 cup chopped onion
3 garlic cloves, minced
1/2 cup salsa
3 tsp cumin
1 can black beans
1 can diced tomatoes, undrained
1 can corn or equivalent amount of frozen corn
1 tube polenta cut crosswise into 12 slices and warmed in microwave

Heat oil and sautee peppers, onion, garlic until softened. Stir in salsa, cumin, black beans, and tomatoes and bring to a boil. Cover, reduce heat, and simmer 10 minutes, stirring occasionally.

Serve over warmed polenta. Top with avocado, chopped cilantro, and sour cream if allowed on diet.

No rice. He just said no cheese and sweet potatoes are ok i would assume since they are on the 5 week diet plan he provided!

This is my favourite quinoa recipes! So delicious. If you don't like tofu (which it is surprisingly good the way you fry it in this recipe) you can substitute with chicken. I may have to try to find time to make this soon!
