Peppermint Bark Recipe

This is for you, kcrkcs!!
~ 2 lbs dark chocolate melts*
~ 2 lbs white chocolate melts*
- Peppermint Spirits (this is the key. you can find it on Amazon or at health food stores. Do not use Peppermint Extract. It is not the same flavor!)
- Crushed candy canes (I just put candy canes in a gallon size ziplock and smash 'em up!)
Line a deep cookie sheet with wax paper, enough to go up all 4 sides. My cookies sheets are about 17 x 11 x 1
Melt the dark chocolate melts in a double boiler. I just put a metal bowl on top of boiling water in a big pot. Stir until melted completely then add 5-7 droppers full of peppermint spirits and mix in (taste the chocolate with a spoon to see if it is pepperminty enough for you. You can always add more!). Pour the peppermint dark chocolate into the cookie sheet and spread with a spatula until smooth. Put cookie sheet in freezer for 10 minutes or until chocolate has solidified.
Melt the white chocolate melts in the double boiler. Stir until melted completely and then pour on top of the solid dark chocolate. Spread the crushed candy canes on top. Tap the cookie sheet on the counter a few times so the candy canes embed themselves into the chocolate. Put cookie sheet in freezer for up to an hour to completely solidify.
Remove cookie sheet and let soften for about 15 minutes. Remove wax paper from the bottom of the peppermint bark then use a butter knife and break the bark into pieces.
* I used bags of Ghirardelli melts (each bag is 1 lb 14 oz). They are about $17 each on Amazon. You can buy and use cheaper chocolate. I've used the Wilton melts as well with good results. Either way, you get A LOT more than you do in the Williams Sonoma tin for about the same price.
