Here's the part I'm having trouble following: if you're subbing out major ingredients (like boxed cake or a different frosting recipe, for example), are you really even making this cake? Or are you just making a 3 layer funfetti cake at that point?

I think chocolate icing on a yellow cake like that will be harder to pull off and still look good. You'll need to be on your A game.
