With V I built up a stash of about two days worth before I started back to work. After that I just pumped daily at work and since my output fluctuated, so did my stash. Usually though there was at least three or four days worth in the freezer though.
Are you EBFing otherwise? What are you looking to have an emergency stash for, just for another similar emergency health situation? Is that a health scenario that is likely to happen again? If so I would try and build up enough for a couple weeks in the hospital, if not and you are just EBFing maybe a couple days worth so you can have a couple days to build up your supply if you have a dip or something.
I worked FT and pumped a lot and was a milk donor so I think my idea of what emergency stash I'm comfortable with is not normal.

If he was to drink the frozen milk only, I have about a week's worth. I only pumped occasionally while on leave and now I pump 3 days a week while at work plus an extra one-side pump some mornings if DS slept a long time.
I have about 2 days worth in the fridge. If I end up pumping more than I need to keep the fridge at 2 days' milk, the excess gets frozen so I'm continually adding to my stash a little at a time.
Once in a while I'll thaw milk for his bottles and freeze the whole day's pumped milk to keep my stash rotating. That way nothing sits in my freezer too long.

I dipped into my stash almost every day since I couldn't keep up with what daycare was feeding him, so I'd pump and freeze extra on the weekends. So at any given time I'd probably have a week's worth of milk.
