Anyone else meal plan? Wanna chat the upcoming menu?
I had been doing super well for a while. Then I kinda fell off the bandwagon. But I'm determined to buckle back down and trim our grocery budget and stick to a menu.
I do mine based off 2wks. DH gets paid every other. So, here goes
2.26- crockpot beef and gravy with either potatoes or noodles. Haven't decided if it will be stew like or just over noodles. 2.27- grilled chicken legs and thighs. Potato salad. Corn. 2.28- leftovers 3.1- out to eat after church 3.2- tandoori chicken and cucumber salad. A new recipe I'm trying. Wish me luck! And some side. 3.3- leftover chicken from Monday and potato soup 3.4- turkey Dijon melts. Some side tbd. Maybe leftover potato salad. 3.5- leftovers 3.6- risotto and sausage and broccoli. Another new recipe. 3.7- creamy chicken and pasta. Green beans. Another new one. 3.8- out after church 3.9- leftovers 3.10- beef macaroni vegetable soup and grilled cheese. Soup is another new recipe.
I decided I needed inspiration this time around. So I pulled back out some cookbooks and am giving it a whirl.

I only plan a couple things per week since there are definitely leftovers (H is deployed so it's just me an DD). I haven't thought about next week yet. I did the Whole30 in January and will start that again on the 5th.

I finished a Whole30 in January too. I need to get back into it so badly, but the nausea is making me eat all the carbs right now.
I use Yukon red or Yukon gold potatoes. I leave the skin on because lazy. Dice them. Boil them in chicken broth. Use my immersion blender to puree the potatoes in the broth. I add salt and pepper and almond milk and garlic salt until it tastes good. (Ds doesn't do much cow dairy. But you could use regular milk) Sometimes I add cheddar cheese and/or sour cream. Just based off what I'm feeling like.
This is how I do broccoli cheddar soup too. Just swap the broccoli for the potatoes.

Thankfully mine only hits around dinnertime, but that definitely could change and a Whole30 could go out the window in the name of survival.

Mine did it with me and he was miserable the entire time. I told him he can make his own food choices, but I was eating Whole30 compliant at home and wouldn't buy anything not on program.

Finally made it to the grocery store today! I usually do a week at a time, but it's typically just 3 different meals and any leftovers. H and I have been low carbing since November, so my shopping is based around that. Taco bell and stealing DS's snacks aside, I'm doing my best to stick with it. Here's the menu this week:
Sat- Muffin Sized Quiches Sun- Going out to eat for a nephew's birthday party Mon- Paleo Crock Pot Chili Tues- Leftover Chili Wed- More Muffin Sized Quiches Thurs- Ground Turkey & Green Peppers w/Onions and Mozzarella Cheese Friday- Grocery shopping again, TBD
Today was the first day this week that I really cooked. I did an easy baked penne with ground beef/onions. Should give H lots of leftovers for the weekend.

Same here! Jan was awesome, ate so well, lost 10lbs and now all I'm eating are quesadillas, tacos and rice. And root beer. I feel so gross.
