Blacks bean tacos - heat up the beans and the tortillas or hard shell tacos, add lettuce, cheese, tomatoes, salsa, sour cream, etc. if you have time fry up some peppers and onions. I buy the pre cut ones from the store.
Pizza: buy premade crust, add toppings! Some good combos: grilled veggies and cheese (most grocery store delis have pre grilled veggies), or alfredo sauce with pears, Gorgonzola cheese and walnuts. Fair game is any veggies you have handy, fake meats and cheese. Throw in oven. Done!
I found this recipe for a tortellini soup. It's cheese tortellini, broth, and some spinach. I thought it was pretty good. Put some fresh parm on top. Yum!

mommabakes talk to me about this pulled pork-- crockpot?
So far, I just have white bean chicken chili with cheese/salsa and chips going for tonight. I was also thinking bbq pulled pork with a veggie and also crockpot beef and noodles with a veggie but haven't picked up groceries for those yet.

bubblefan yep, just a pork loin in the crock pot. I add salt, pepper, brown sugar, and a can of Dr pepper. Leave it in all day on low and it's easy to shred up with a couple of forks at dinner time. The soda really helps it shred easily.

This week: Sunday & Monday:Braised short ribs with roasted garlic and truffle whipped potatoes Tuesday & Wednesday:Pulled pork with chimichurri, sweet potatoes, salad Thursday:Chicken with lemon orzo salad Friday: TBD, leftovers or take out Saturday:Dinner for my husband's birthday at a nice restaurant (I'm pretty stoked and keep looking at the menu more than I care to admit)
