DH and I are meal planning for next week and discussing quick, easy meals since I'm going back to work. I told him I think we need to invest in a programmable crock pot, he suggested we get an Instant Pot. I don't know anything about this? Could I do the same things in the Instant Pot that I can in a crock pot, i.e. throw a chili together in the AM and have the crock pot switch to warm after the set cooking time? What else can you do with an Insant Pot?

I like mine. You can make chili in it but not like a crockpot. Instead of doing it the am, you brown the meat in the instant pot when you get home, throw in all beans and other stuff and turn on the instant pot. Chili cooks in like 10 minutes and it's really good.
I will come back later and post a few recipes. I'm a fan of mine.

I think this was pretty good. If you don't care about being paleo (I don't) you can sub flour for arrowroot powder. I think that's the only super paleo ingredient.

This is the chili recipe I started with. I have my own version with these boracho beans you can buy at a local grocery store but this recipe gives the basics and the timeline.
I like mine a lot. I like that I can cook beans in a reasonable amount of time without soaking them. I like that I can cook a big chunk of meat quickly. I love it for beets, because I can steam them quickly.
It's really nice for cooking meat and stuff because you can brown it in the instant pot on the saute setting and then put the lid on and cook it. Much easier than browning in a pan and transferring to a crock pot.
I use it as a rice cooker also.
Do you ever feel like your instant pot gets too hot in the sauté setting? Even with lots of oil in the pan, things frequently stick to it and they stick very quickly. I vaguely remember reading that some instant pots run too hot but I haven't put any effort into researching it yet.
