I was right to panic about my Disney trip. The Beach Club was totally booked until the end of August. I'm now booked for then but I may change resorts to go earlier. DS1 turns 10 mid-August so now I'm paying several hundred dollars more because he is an adult.
In the meantime, I have booked my dining so I know I have stuff but I want some new places. Like, I booked Hibacchi but we do that at home. Ohana is our favorite and I had to take that middle of naptime because that is all I could get.
This is our 4th trip with kids and I find we do the same stuff for dining. Kids will be 3, 7, and 10. Last trip was summer 2015.

There are very few Disney restaurants that I consider great food or anything but they serve a purpose and sometimes it's the only way I can eat relatively healthy.
The Grand Floridian has some of the best restaurants if you want a nice sit-down meal, Narcoossee's, Citricos and Victoria and Albert's.
Le Cellier in Epcot was one of the best meals, food-wise. Via Napoli in Epcot is a good place for pizza and wine.
I love the Sci-Fi Drive-in Theater, it's a must-do every time. Also in Hollywood Studios, 50's Prime Time Cafe is fun and comfort food.
I don't think there's any great MK options but we enjoyed the Jungle Skipper Canteen.
I like Yak and Yeti in AK.
I always do character meals: Crystal Palace in MK, Garden Grill in Epcot, Chef Mickey at the Contemporary, Disney Junior Play and Dine in HS, and Tusker House in AK are all solid options.
Also, Disney Springs is included in the meal plans, so don't overlook them. We really enjoyed Morimoto while there and Chef Morimoto cooked for us! We have eaten at other Morimoto's and that's the first time we met the man himself.
Cherhorowitz thanks! I booked the SciFi one for the first time because I thought my oldest would like it. I booked Disney Jr breakfast for T and Akershus for DD. I have a feeling this could be her last trip still caring about Princesses. I have Chef Mickey for the first time because again, I fear they will be too old next time. I'm thinking of trying out the Sandcastle club childcare and doing 1 kid free dinner, probably Epcot since it's close to them if there was a problem. Le Cellier may be a good choice for that.
Lots of good suggestions so far. Ohana at the Polynesian is a must-do for us every trip. So much food and it's all so good. Beachs N Cream is at Beach Club and is great for burgers and ice cream.
ETA: I missed where you said you had Ohana booked. We are going in May and I'm so excited!
