Busy day yesterday so here are my answers to the questions asked:
Meals this week (very beef centered this week): -corned beef, cabbage, baked potato -chili and corn bread -unstuffed golumpki (cabbage, ground beef, tomatoes and sauce in a skillet) and steamed broccoli
The 2 year old's attitude: oh yes. She has her moments. She gets time outs for telling us 'stop', which is a lot. She wants to walk in stores but then runs away so if I'm by myself she's not happy I put her in the cart. When she's done eating she wants down immediately regardless of the rest of us so every dinner is a mini shouting fest (on her end). Don't get me wrong - she is normally a sweet toddler and probably very normal acting for this age. But she definitely has a different temperament than N!
Snow: lake effect was bad in the city but not where I live. We had a few inches in the morning and then it melted in the sun on the streets/driveways by noon.
Easter baskets: I have been collecting things from the dollar store: new fun placemats, bubbles, Disney/paw patrol figurines, ect. They will also get a disney movie to share (we always got that as kids), a chocolate bunny, and an eggspressions wooden egg toy for A. We also do an Easter egg hunt from us (not the Easter bunny) with snacks and coins and candy/little toys.
dreemkin i just looked up golumpki...yum! i might have to try that soon.
i'll make DD some kind of little easter basket, but i'm going to try to keep it very small. i did just buy her beauty and the beast and tangled for no reason, so maybe i'll put one of those in the basket. we'll do a little egg hunt at home and she'll get some candy and maybe a new coloring book or something, but the way my in laws and parents gift her, i have to keep it small or we'll drown! haha. talk about first world problems.
agm04 I had left over cabbage so it's perfect for that. Actual golumpki sounds daunting to me but deconstructed is easy!
As for my randoms: we had a chili day yesterday! It was very nice. We made chili, watched Moana while it simmered, and had a chili feast for dinner with my whole local family. I made cornbread which was a big Lenten challenge for me since I gave up bread. And it was also a diet challenge because our chili loaded with all the fixings is one of my favorite meals. I only had one small(er) bowl with only a few noodles (we add elbow macaroni to our chili!). I still got a workout in at night too.
Then before bed, I almost asphyxiated H and I by cleaning our master bath shower with bleach and then (not thinking) sprayed a peroxide mixture into the same bathroom. Even with the vent and our bedroom fan on, I got a headache and could still smell it this morning.
Ands we haven't been doing much cooking, we made lots of freezer meals and stocked up on ready to eat meals. Plus our families and friends have been super generous and gifted us meals.
kartish that sounds amazing. I'm going to try it! I had to admit, I've never had Indian food. But this recipe sounds easy and tasty. Aside from the spice, it sounds kind of like Thai food, which I love!
ETA: bonus is no meat. Great for Friday's for me during Lent.

I made the trip into the office today but kind of regret it - everything is a slippery, slushy mess and the trains are running reduced service so my commute is extra long. I had a presentation to do which went fine, but now I'm really feeling unmotivated to get anything else done.
For DD's Easter basket we'll probably do some candy and I'll look for a book or two. Last year I got her one of the Duck and Goose books so maybe another one of those. She also still really loves yogurt drops so we'll probably do those inside the eggs for her egg hunt which at least seems healthier than lots of candy. She has recently discovered chocolate and every time she has some she hilariously declares "I like it!" She had a chocolate munchkin for the first time last weekend and then her first girl scout cookie (a samoa) yesterday and both got the "I like it!" reaction. She also loves stickers so maybe I'll look for some bunny stickers or something to stick in there.
dmorgendorffer i've been bookmarking some crock pot freezer recipes - like you freeze everything ready to go in the crock pot, so it's a fresh meal without having to do much. i'll share when i get them organized! last time a bunch of my freezer meals had dairy in them, and i ended up having to cut it out, so i may do everything dairy free this time just to be safe. here's what i remember from last time:
- meatballs and sauce - one of my favorites to freeze! - meatloaf made in muffin tins (so it's easy to reheat a single serving) - pulled pork (which i make in the crock pot with pork loin) - chicken salad - cinco de mayo soup (similar to tortilla soup) - chicken spaghetti - chili - lasagna
So sick of pot roast and we have another night of eating it to go. I need to make mashed potatoes in the morning for it because we ate all the roast potatoes and I don't have time to cook in the evening. Plus it's so hot here so I can't roast more in the oven.
On second thought, I'll save it for Friday and making cottage pie. I may do takeout tomorrow to give us a break. I'm leaving work early so maybe a frozen lasagne is in the cards. Or ravioli. Something other than beef and veggies.
