How do you do your orange dijon salmon, aydee? That sounds like something we'd like. I plan to make salmon this week, but I'm undecided what I'll do with it!
Nothing sounds good to me right now. I've been living off bowls of rice, gochujang, sesame oil (spicy Korean chile paste) and cucumbers.
But this is what I plan on cooking for dinners: M: grilled chicken, said rice and cucumbers plus a simple arugula salad T: pasta with a semi-homemade sauce including sausage plus kale salad W: salmon and rice and broccoli R: grilled cheese and soup or maybe quesadillas and beans F: turkey burgers and fries and maybe a veggie

It's really quick and easy. Mix equal parts orange marmalade with dijon mustard, spread over the salmon, and bake in the oven. The recent jar of mustard I got was kind of spicy so I've had to go a little heavier on the marmalade in order for the kids to still eat it. It's delicious!
What do people do for breakfast and lunch. We've been cycling through the same things and I think both of us are bored.
For myself: a salad, tuna salad on naan, tuna cakes, or homemade, Chipotle style burrito bowl. Occasionally I'll make a big pot of soup for the week.
For the kids, they usually have either PB sandwiches or pepperoni/salami slices with fruit, sliced bell peppers or grape tomatoes, and crackers/PopChips, sometimes yogurt or cheese..
ETA: breakfast is mostly cereal or oatmeal. With a second breakfast of fruit or yogurt.
At least my meal-planning self is somewhat healthy. I did not feel like eating salmon and broccoli tonight but I stuck to the plan and made it happen.
I think we'll switch up the turkey burgers to tomorrow though since Friday looks like rain. I'm thinking maybe goat cheese and arugula as toppings but what kind of sauce would go well with that (that I could make with stuff I might already have)? I feel like ketchup + goat cheese doesn't really go well.
