DD was due the weekend before Thanksgiving (it's in October in Canada). I was so pissed that i was still pregnant on Thanksgiving because I had no room for all the glorious stuffing.

DD was due in December and I was pumped to be pregnant over Thanksgiving because unlimited excuses to over indulge. Then she came 3+ weeks early and came before Thanksgiving. I still over indulged, lol.

Tonight I'm making soup with portuguese chorizo, potatoes and kale. DH is happy. I'll use all the kale.

Salmon is so good for you, but I haven't been into it lately.

Also, we are going for lunch with DH's dad and I feel like a burger, but maybe I'll skip the fries.

Super easy! When I make it, I brown the sliced sausage (I use linguica) with onions, then I add chicken broth, potatoes, and kidney beans to the pot and summer until the potatoes cook. Then, for the last few minutes I add the kale. Most people add macaroni too, but I usually don't.

Instead, we're going to pick up some salmon since it's something we know the toddler will eat too. I need something good to do with it though. Not sure how I want to cook it... we haven't checked our BBQ for winter mouse visitors yet. So maybe broil?

Rub with olive oil, season with salt and pepper, squeeze lemon on it. I can't find temp/time but baked through obviously. So simple and delicious.

DH does a brown sugar salmon that's really yummy too. Also baked/broiled.

ETA: we do roasted or sauted Brussels sprouts with salmon usually. DH uses bacon fat instead of butter or olive oil (not a low fat meal, but it's yummy!).
