Tonight is our neighborhood book club and it's my pick - The Best We Could Do. Awesome book BTW. I'm providing Pho and everyone brings food - this time is mostly spring rolls, fresh rolls, shrimp, salad and cookies, apple pie and cinnamon ice cream.
I was thinking 5 regular Pho (eye of round) - and I will put it the crock pot 30 minutes before then serve from there - on keep warm. (A regular would never fit in our standard bowls - we use these big bowls). With other food I feel like eating half a regular makes sense.
It's ten women. Thoughts on eye of round versus other varieties, number of Pho to order to go, if there's any issue with the crock pot plan (the noodles won't break down or will it all fit?? I can use a second crock pot if needed too)?
xctsclrx - you have to try it! Low calorie and fat, good protein and carbs (depending on what kind you get) and super yummy - it's a Vietnamese soup - with meat, noodles and onion, bean sprouts. Can spice to taste.
