It sounds like a few of us need some help getting the creative meal planning juices flowing, myself included.
So, what's for dinner tonight/tomorrow/this week?
I'm stuck in a rut of the same 6 or 7 dishes on repeat, and most of them have the same core ingredients (like tacos and enchiladas). We had chicken pot pie tonight. I think this week we'll do roast chicken with veggies, spaghetti some way (either with Cincinnati chili or with pesto and chicken), and chicken on the grill. We have 1 Blue Apron meal which is where all our variety comes from - I think it's chickpea stew.
Here is our list for the week. I am trying to get better about using things in the pantry and freezer. Sides to be determined. I bought things that could be interchanged.
Pork tenderloin sandwiches BLTs Brats Chicken and stuffing bake (from the back of the stuffing box) Unsloppy Joe's
Sun- Ham, potato salad and strawberry salad. (Romaine, Strawberries, Feta and Walnuts w Balsamic Vingerette)
Mon- Roast Beef (literally just throw it in the oven with cream of mushroom soup over it), baked potato, and strawberry salad again.
Tue- Taco Tuesday!
Wed- Go to meal of buttered noodles with vegetables. (Noodles, butter and frozen veggies...seriously so easy, if I have left over meat from something I might throw it in...)
Thursday- Open Face Tomato Sandwich (wheat toast, buttered, Brie and then topped with heirloom tomato slices) Served w salad w a protein in it- probably salmon)

M - salsa chicken and rice bowls T - brats, roasted zucchini and squash, pineapple W - salsa chicken tacos Th - pancakes and bacon F - back to baseball night so we will grab subway. I may also serve cereal since I'm solo every night but Tuesday. Sat - I'm taking a stab at making a spinach artichoke pizza.
One pot pasta dishes are a big hit. Pinterest has lots that are only like, 6 ingredients.
My personal fave is a summer one.
Thin noodles, cook and drain
Cherry tomatoes Pesto Parmesan cheese Fresh basil and oregano 6 cups of milk
Stir it all up, add noodles back. Super tasty.
That sounds so good. (All ingredients I love) What do you do with the milk? Do you boil everything?
OMG I messed up. You boil the noodles in the milk! Like all the ingredients get boiled together. Then you add the cheese when the pasta is done to thicken everything up.
