I'm really getting into having pre prepped salads for lunches that last for a couple of days of leftovers too. We have a caprese salad way too regularly, so I'm trying to branch out. Just tried a new recipe for a Greek style salad today; it was really yummy.
If anyone is interested: Mini cucumber chunks, tomato chunks (I think halved cherry tomatoes would be good too), a little thinly sliced red onion, feta cheese, kalamatta olives, EVOO, a very healthy dose of lemon juice, salt and pepper.
Does anyone else have any similar style of recipe that they want to share with me?
my BIL makes a really yummy arugula salad that is so easy. Just arugula, fresh lemon juice, EVOO, and shredded parmesan. It's so fresh and way easy to throw together

I have no recipes for anyone, but I came here to say that instead of a giant butter croissant (which is what I wanted) I had a fruit and yogurt parfait for breakfast this morning. And it's all your fault.

I'm super into salads with fruit. I do mixed greens, celery, apples, strawberries, dried cranberries or raisins, chevre or blue cheese and top with olive oil, a really good, syrupy balsamic vinegar and black pepper. Great on its own, but also good with the addition of grilled chicken or ham.

Spinach, shaved Brussels sprouts, bacon bits, Parmesan, almond slivers, and craisins. Dressing of EVOO, lemon juice, garlic salt, black pepper, and Italian seasoning.
