What's for dinner this week? I have been extra hungry in the afternoons this past week. And I've been craving dairy (milk and yogurt specifically)! Any good lunch and/or afternoon snack ideas to share? What have you been munching on?
Sun: homemade 'famous bowls' Mon: one pan chicken, potatoes, and green beans Tues: Salisbury steak Wed: shrimp alfredo Thurs: chicken noodle bake Fri: Doritos chicken Sat: something hubby calls cowpoke (cornbread with baked beans and ground beef on top, he and DD love it)
Kids are probably going to get left overs hot dogs and macaroni and cheese tonight.
I'm going to make roasted potatoes, carrots, cabbage, and sausage tonight.
Tuesday: left over spaghetti and meat balls Wednesday: Stir fry beef Thursday: most likely scrambled eggs.
I have two meals planned for lunch. Fried rice with chicken and extra veggies on the side. And teriyaki chicken and rice.
I'll take a picture of my snack later. I throw a few small portions of protein items and veggies in a container and toss crackers in a bag on the side. It's been working out nice and I don't get bored of it. I plan to change it up a bit later this week.
sarenu , thanks for the snack ideas! What do you do for proteins? Eggs have been giving me heartburn lately; otherwise, I'd keep those on hand.
Flick , your DH's "cowpoke" sounds interesting. Do you have a recipe or is it literally cornbread with baked beans and ground beef on top? 😉
I use silicone cupcake holders and put nuts and hummus in each container. Then usually a laughing cow cheese, hard boiled egg, and then veggies (cucumber or carrots).
You could also do fruit, sliced cheese, dried fruit, yogurt dip, peanut butter (or other nut butters).
Maybe look into bento boxes for ideas. It usually helps me with portion control for things like nuts and hummus. Plus I don't feel like I'm throwing single serving containers in the garbage all the time.

Thanks! These are awesome ideas. I already have some bento box style containers and some silicone cupcake holders. Since I'm home with DD I don't put much effort or thought into snacks -- I just kind of grab what's easy and what's there. I'm going to try your ideas to help with portion and QUALITY control. If I prep 6-7 snacks like this, I can just grab one from the fridge at snack time each day.Requires more thought and effort, but I think it'll be worth it. Brilliant! Youve inspired me. Thanks so much.
Love reading through all the ideas! I will join you all next week as DS is about to start at a daycare where I need to provide lunch. This will require more organization on his parents' part

@wicky LittleStarSweeper Cowpoke is literally just cornbread with baked beans and ground beef on top. I brown the beef and strain it, then mix in a can of baked beans or two depending on how much meat I have and then just cut up the corn bread and pour the beans/meat over top. It's super simple and I honestly thought it was going to be hork worthy but I really like it.
