Which flooring should I use for my mother's workshop?

My mother rented a small space for conducting workshops on cooking different cuisines which everyone can share and learn. She bought it off at a reasonable price which didn't cost us so much so that the remaining amount can be spent on renovating the space and bringing in furniture. The vinyl flooring was rough on feet and had to be changed for good. We looked for antique flooring options which could be easy on pocket and environament friendly. But they also had options of hemlock flooring which i thought would be a great option as compared to the pine, oak. They would be providing finished product and then it would be easy to use as well.
