Dinner plans got changed. H decided we needed to go to Publix first. Which turned into let's go to Chili's, then Publix. So now I'm filling my belly, sipping on 2 for 1 long islands & then I'll go grocery shopping.

Filling: 2 cans of chickpeas one can of tomato sauce (unseasoned) one white onion Red and Green pepper (I am using chopped fresh today, but ideally I would use roasted peppers, and in that case increase to like 6) 2 or 3 tomatoes cilantro chilli seasoning
wrap a healthy 1/3 scoop of filling in a tortilla
smoother in enchilada sauce and sprinkle with monteray jack cheese
ETA: I should probably add that I am then baking them in the oven for 30 mins on 350. Or sometime like that? Until they are done haha
I tend to eat a can of soup for lunch almost every day at work, and am trying to break that habit ($$$, plus so much sodium) so I attempted my own veggie soup tonight. It seems ok - we'll see how it is for lunch tomorrow. And maybe for the rest of my life. I may have overestimated how much it would make.

This sounds amazing! Do you blend the filling together, or just use the chickpeas whole? I've never made enchiladas before and may have to try this week!

I made that yesterday. It was really good! I took some of the suggestion and used balf sour cream and half mayo. Could use plain Greek yogurt too. Also the bread crumbs on top are not in the original recipe but I added some.

Do you make your own enchilada sauce or use store bought? They changed the recipe of my favorite store bought and I'm no longer a fan.

I just buy thick chicken breasts and cut a slit in them as far as possible to make a big pocket inside each breast. Then I mix cream cheese with shredded cheese and diced up jalapenos. I stuff that into the chicken and then bake in the oven. For mine I just do a thin layer of cream cheese in the pocket with slice of gouda.
Waiting on H to get home from work. We are having take and bake fish dinners from the grocery. They sound disgusting typing it out like that; hopefully, they are not. Grocery store shopping was a success overall.
