We were supposed to have chicken curry made with the last scraps left off the chicken that has fed us for 2 days so far.
DH kindly offered to cook as I had to rush to pick up DD from school because she was poorly and still handle a full work load (as well as keeping relatively up to date with today's events).
I ended up with rice and a little rogan josh sauce as hubby forgot to take all the bones out of the meat and I gagged. (I'm sure there is a joke in there about me not liking bones in my mouth ;-) )
I have some leftover plain chicken titties in the fridge...what should I do with them? Something easy but....ah...I don't know...different? I'm tired of bbq, oven fried, blah, blah, blah.
And what are YOU eating tonight?
First, "chicken titties" is my new go-to phrase bc I hate talking about chicken breasts.
Second, my favorite thing to do with chicken is cube it and then simmer it in some kind of Indian simmer sauce (I love butter chicken). Make some rice and you have an awesome meal in under 30 minutes! I get this one simmer sauce that is in a bag - I always keep a bag or two in the pantry!
Third, no clue on dinner tonight. Might be a pizza delivery night.

My mom is such an awesome mom, she made some yellow rice, beans, tostones (fried plantains) and chicken cutlets for me and my husband. I'll be picking up that deliciousness after I get outta this office! I love my comfort Colombian food!
Haha I actually already make something like that with my ground venison; I was expecting something....soupier? Maybe? Dunno. But still sounds delicious!!!

I'm doing roasted chicken tonight. Basically just put chicken thighs/wings, potatoes, onion, tomato in a pan with salt, pepper, oregano, lemon, a little oil and water. Put it in the oven at 350 till its done (60-90 mins)

I lied we ended up having Annie's shells and white chedder which I jazzed up with some brocolli, gorgonzola, and extra sharp cheddar. I really wanted comfort food by the time I got home.

It won't help you right now because it's crock pot but... I put chicken in with a bottle of bbq sauce, a small can of crushed pineapple and a few spoonfuls of apricot jelly. Cook 4 hours, shred and serve over rice. FFWC: I eat just the rice and sauce
As for dinner, I figured Reese's PB cups and cookies were not an acceptable dinner so I had leftover spaghetti squash casserole. DH is working late so I tossed that in the nuke, made DD a grilled cheese and called it a night.
Not gonna lie, we're seriously considering PB&J over here tonight.
But my go to with chicken is a Bisquick chicken and salsa bake. Pan fry cubed chicken with onions and bell peppers, coat with salsa. Mix up a bunch of bisquick, spread it on the bottom of a casserole dish. Top with chicken/veggie mixture. Add a little more salsa, then a layer of shredded cheddar. Bake.
I got it off the bisquick box, cause I'm classy like that.
