I just made a cheeseburger and some mixed veggies. I have a feeling DH is going to be late tonight so I went ahead and ate. I really wanted Boston Market, but decided that since we actually went grocery shopping and had food in the house I should actually cook something.

Open face roast beef. It's our cheat meal and my "I don't really want to cook" meal. Store bought roast beef (Hormel, I think.. In the meat department) over mashed potatoes over frozen garlic bread. Sounds healthy, right?

I made the Tex Mex Casserole from the Oh She Glows cookbook. Except it isn't really vegan because I used real cheddar. I have zero time for that Daiya crap. Being vegan for two years taught me that zero cheese substitutes exist.

I made whole wheat spaghetti and meatballs but I hardly ate any. I feel a little nauseated, exhausted, and no appetite since late this morning. I have no time to be sick!
