In the summer we grill...a lot. We usually steam some spinach or kale with it and have some pasta or potato (H cannot abide no carb, ha...I do sweet potatoes usually).
We also do a lot of chicken thighs, cheap flavorful and easy to use lots of ways.
In the winter MH loves meatloaf and jalapeño Mac n cheese, we make it way too much.
I'd eat tacos or burritos way more if it were up to me, MH likes them but not as frequent.
I love the crockpot but can't leave it on all day with no one home but the dogs...they have no manners and won't wait for us to get home to eat on the weekends I use it a lot tho!

One of the meals that has the highest delicious:easy to make ratios that we have is Italian Beef sandwiches.
Put 3ish pounds of chuck roast in the crock pot Rub 1 packet of (zesty) Italian salad dressing mix on that bad boy Pour 1 can o' beer (whatever you want) all over that bitch Heat on low for 8-9 hours
Getcha some hoagie buns and your favorite condiments (peppers, provolone cheese slices, etc.) Makeya a sandwich.

We have the "Eat Like You Give a F*ck" cookbook. LOL.
We do a lot of fish with a veggie or chicken with a veggie. Tonight we are eating blackened salmon with broccoli and rolls. Sundays I throw something in the crockpot, usually roast.
I liked Pinch of Yum's lemony chicken with asparagus. It's super easy and quick.
I'm going to try to cook mussels tonight in a white wine broth with some French bread. I have heard they are easy. We'll see.
I'm dying to try mussels but I'm a wimp with cooking seafood, I want to hear how they turn out!!
You can do it!! They're pretty foolproof, you know that any open ones before cooking should be tossed, and any that don't open after cooking them should be tossed. Definitely give it a shot!

Did yall buy a cow?? My husband wants to do that. I'm sure we would only get half at the most, but we have a deep freezer now and I think he wants to fill it up as fast as possible
We bought a quarter cow. Sadly we go through ground beef like crazy, so now we have a deep freeze with a ton of steak and roasts....totally a problem I'm ok with having.

Sounds good - For what its worth I think we spent $4.90/# on the whole cow and got around 130# I think? It was 60# ground beef, 70# steak/roast. They said it was one of the biggest ones they had ever butchered. The biggest part was knowing the farmer. My cousins' family raises beef so it helped.
I really need to invest in a nicer crock pot! I always find amazing slow cooker recipes but they never turn out well because my crock pot is old and gets way too hot (even on low) and way over cooks the food.
Burrito bowls (rice, beans, bell peppers, salsa, avocado) Pasta with marinara and mozz Chicken or tofu cooked in jarred Indian simmer sauce (Patak's is great) and served over rice Pizza! (I make dough in advance and freeze it then put it into the fridge to thaw out the night before I want to use it, Sally's Baking Addiction recipe is my favorite)

Some of our "go to" meals include chicken and steak fajitas (last nights meal), pot roast and potatoes in the crockpot, homemade pizza, stuffed peppers, chicken and quinoa casserole, and grilled salmon and squash. Really over the summer, we do a ton of grilling in general.
My new favorite recipe I have come across is stuffed, baked zucchini which is AMAZING!

I own multiple crockpots. They are life changing kitchen appliances. Tonight I have coke BBQ ribs slow cooking in the crockpot.
Once a month a make up a bunch of freezer meals for the slow cooker. I cut, measure and combine all ingredients into ziplock backs and freeze them. Then all I have to do is put one bag of frozen ingredients in the crockpot and go. It's perfect for us because we are so busy but we still get to eat nice healthy meals even if we're short on time.

We buy a half and it is so nice! The quality is so much better than store bought. Luckily, we are able to store it at my MIL's, so we don't need a big freezer.

I'm glad I'm not the only one who owns multiple crock pots. I have 5, MH thinks I'm crazy to have that many!
I'm sure you can adapt this for the crock pot or just regular stove top, use the same ingredients and instructions and throw it in the crock pot!
I will have to try this. We got a pressure cooker as a shower gift 3 years ago and I have never used it. MIL lives by hers but I haven't gotten to help her use it to learn how.
