I made a three bean salad yesterday. Open bean cans, add other veggies (optional), mix oil, vinegar, sugar, spices and pour over salad. Let sit overnight and eat. I make a chick pea salad a lot during the summer, especially good to take to work for lunch. Grape tomatoes, cucumbers, chick peas. I make my own italian dressing for it.

I like to make a really easy cabbage salad that's like a mayo-free coleslaw - shredded cabbage (I usually buy the coleslaw mix that's preshredded), matchstick carrots, and sesame seeds, then mix with a dressing made of olive oil, apple cider vinegar, garlic salt, and a little oregano. It's crunchy, tangy, and very healthy. Sometimes I top it with a can of tuna for lunch.

This is one of my favorite summery dishes. It gets bonus points for being rainbow-y.
Lemon Feta Pasta Salad
7 tbsp extra virgin olive oil 4 tbsp fresh lemon juice 3 tbsp whole grain mustard 2 garlic cloves, minced 2 tsp lemon peel, grated 1/2 c pine nuts 12 oz penne 2 c halved cherry tomatoes 1 orange and 1 yellow bell pepper, diced 1 1/2 c crumbled feta 1/2 c green onion, thinly sliced
Whisk oil, lemon juice, mustard, garlic, and lemon peel in a small bowl to blend. Season with salt and pepper.
Cook penne in a large pot of boiling salted water until tender but still firm to bite. Drain. Rinse pasta with cold water to cool quickly and drain again. Transfer pasta to large bowl.
Add tomatoes, peppers, feta, green onion, and pine nuts. Pour dressing over and toss to coat. Season to taste with salt and pepper.

I am making a pot roast in the crock pot. 5-6tbsp butter, 1 chopped green pepper, packet of ranch, packet of aux jus, 3ish lb roast. I set ours for 5 hours. But might take a couple more.

My favorite and easiest to make is grilled chicken. I season the chicken and stab it a bunch with a fork the night before and then pour Italian dressing over it and let it marinade for the day. Throw it on the grill the next day and there you go

Corn, black bean, tomato, and avocado salad. I like to use fresh corn in the summer.
I just rinse the beans, chop tomatoes and avocados, and strip the corn off the cob. If I'm feeling spicy I'll add a jalapeno. Lime juice, olive oil, S&P, cumin, and a little garlic round it out. Some finely chopped red onion if you're feeling it. It goes well next to a chili-spiced steak. I serve it cold.
When the tomatoes get good, we eat a lot of BLT's.

I do almost the exact same, only with mango in place of tomato. I'll have to try it with tomato, that sounds good too.
