Love these, you guys! frecklesnbrains , SO MANY VEGGIES! That's awesome! I'm about to go to the store and stock up on veggies right now. I just told my mom that I feel like we haven't eaten a vegetable in months because of my nausea... this.must.change.now.
If anyone has an opportunity to join a CSA then I highly recommend it. It's basically the way that I force myself to eat veggies. Since we joined a couple years ago my vegetable intake has probably increased at least 5-fold. And it's so much fun to get random stuff that you've never had before and then have to search for a recipe to make with it. For example, I have two ENORMOUS daikon radishes right now and I have to figure out what to do with them! I'm thinking of trying these: allrecipes.com/recipe/176729/pan-fried-daikon-cake/
I made this fish chowder with the daikon I got in my CSA. I really enjoyed it. I subbed half the cream with 2% milk.

Y'all this reminds me I have a running list of a ton of meals to make and freeze prior to the nugget's arrival. Things like meatballs, stuffed peppers, marinated chicken for the slow cooker, etc etc. But it doesn't really fit with this post since none of them are particularly quick, just good for freezing and/or making in bulk. But when the time comes, y'all, I'm ready!

frecklesnbrains seriously, I think I'm up to 23 different meals or some ridiculous shit. Then again, I like to cook and yet, cooking is the first thing that goes when I'm tired so... Maybe it's not that ridiculous? Lots of options though at least!

Well, I have no dreams of cooking multiples of all 23 recipes. But, I do have a chest freezer in my pantry/laundry room. It's only like 7 cubic feet so it's pretty small still, but was only $150 about three years ago. Usually I keep pre-portioned chicken, sausage, ground beef, and veg in there, but I think I will probably use all that up in the coming months and aim to fill it with freezer meals. Well, that's the fantasy anyways!

Ah that makes sense! I was thinking this is why two freezers would be so helpful! Unfortunately I don't think it will fit in my condo, so I will have to be creative with space. Definitely going to work on using everything up that's in there now!

titania just last night I made a list of everything in my freezer. I think making a list helps me figure out how best to use it up? Plus I love to check shit off a list, such a good feeling.
