I'm so happy!! Thanks to our tax return, we are finally getting rid of the mismatched hand-me-down pots and pans with cracking Teflon after 4 years of marriage. I got some shiny new ones being delivered to our house next week. It took way too much effort to convince H that it was a necessity. DNW Teflon chips getting into my food.
Cast iron is fabulous for many things, because it's super durable and easy to maintain. The more you use it and keep it seasoned, the better things come out. It also can go in the oven, which is great for putting a deep sear on some meat and then cooking it the rest of the way through for good flavor. It just can't be cleaned like you traditionally clean dishes & cookware, but the internet can help with that. You really only would need one skillet though in cast iron.
All-Clad and Calphalon get good reviews as brands around the board, are sometimes a little pricer but likely will last a long time. I also saw Emeril Lagasse's cookware as recommended, which is rare for celebrity brands.
