I love, love Eloise! I would do Eloise Brenda. I also love Charlotte. I love Hattie as a nickname and I don't love Harriet. I don't like Caroline or Claire very much. They are just blah for me.
What about: Hazel, Eliza, Greta, Eleanor, Norah, Valerie, Beatrice

Claire and Eloise are by far my favorites. The others are good names and work with your son's, but they aren't my style.
Honoring Brenda with a B name: Bridget Bryony Bronwen Brynja (this one apparently means armour and I like the connection to Brenda, which is also Old Norse and can mean sword/swordblade) Eta: Brenna

Caroline- Keepish. It's not my favorite because of associations, and I'm bored with it because I hear it quite often. But it's not bad. Charlotte- Keep. It's popular, but I love it anyway. Claire- Toss. Add Clara. Eloise- Keep, and use. Hattie- Toss. This is a nickname, and I don't like any of the full names for it.
Add: Alice Alexandra Anna Eve Eliza Iris Julia Josephine Rose Simone Violet
As for the mn, perhaps a name beginning with B, such as Bernadette? Or something that is special to her, such as a favorite flower?
Eloise is def my favorite. Followed by Charlotte but it's just a bit too popular. I love the idea of a mn to honor important people, so I would still consider using a name that I didn't love. I would probably look at her mn or her maiden name too. From what you've said so far, I prefer Brenda to Kay. Is there something in her maiden name that can be used?

I'm tired of Charlotte and Hattie is very nicknamey to me, so I'd toss those.

I don't love Brenda either but that's not really a name that there are multiple versions of - it's not a name like Mary where you could sub in Marie or Maria. So I think if you have to use the name, you just commit and use it.
I hope it's okay to post here. I love names, but I struggle with names for my own kids. We used a family name for DS (Matthew PDQ), so there wasn't much discussion there. DD is due in December. We have just started talking names, so help me keep, toss, or add names. The only thing I want to stay away from is names ending in -son because it would rhyme with our last name. So far, we like:

I would also like to (possibly) honor my mom in some way, but her name is Brenda, and I can't really think of any variations that I like.
I love everything but Claire, although I prefer Harriet with the nickname Hattie. Most names with the -ie sound very juvenile to me.
I also like Henrietta (Hettie/Etta) and Lucy. Eliza and Margaret.
I would just use Brenda as a middle name. I think it works best with Caroline.
Both great names and sound good in their full form, but the nickname options as they age are just too much. Wouldn't chance it. What other names are still on your list?
