We went way over our grocery budget during the holiday last weekend, so I'm trying hard to use what we have on hand. As a result, my meals aren't the healthiest or most creative this week. We are getting a decent amount of produce from the garden, so that's helpful!
Monday: Meatloaf, mashed potatoes, green beans
Tuesday: Burgers, fries, fresh fruit
Wednesday: Chicken and Rice casserole
Thursday: Sloppy Joe/spaghetti with marinara for the kid that won't eat sloppy joes.

My in-laws sent us home with a cooler of venison, but we forgot about it overnight in the car...so some on top had slightly thawed, and now I have to figure out what to do with it the next 3 days. Tonight was venison tacos. Then Wednesday we pick up our CSA so I'll have to figure out what to do with some weird greens.

Bummer on the venison. You could always just brown it up and freeze it cooked, for later use so it at least doesn't go bad, but you don't have to eat it all now. But spaghetti, lasagna, chili, Meatloaf, or sloppy joe could all be done with ground venison.
We did a CSA for a few years and it was always an adventure figuring out how to use some of the huge bunches of random things that came home! But overall, I really enjoyed it. Some of the CSAs near us let you go and pick a certain number of items at the farmers market each week. I think if I ever did one again, I'd probably go that route, so there would be less waste.
Today and tomorrow lunch will be Turkey wraps. Dinner tonight, hotdogs. We'll be heading back home tomorrow night so we'll get something on the road. Breakfast is Froot Loops or granola bars.
I have to get back into meal planning. It can vary so much depending if we are eating as a family of 4 or if it is just the kids and myself. I never see the point of making something exciting (or spending the time/money) when it is just my DS1 and I doing most of the eating.
Vacation this week means we did: Tuesday - homemade chicken nuggets with roasted potatoes Wednesday - Basil chicken and pasta + fruit Thursday - Turkey meatballs, salad Friday - Chicken stir fry Saturday - Leftovers and/or pizza

Would you mind sharing your basil chicken and pasta recipe? I have a boatload of basil to use up.
I'm the same way with simple dinners when DH is not home.

We had venison tacos, used venison steaks to make a beef and broccoli type thing. Tomorrow I am going to try to use some swiss chard in a pasta dish. Then maybe taco salad or something because we have a ton of salad mix and lettuce from the CSA.

Haha. Well, I was quickly outed for my simple meals! I buy a basil marinated chicken from one of the chicken producers in-state. It's available at the local grocery store and it's the same price as unmarinated.
We do use the Alton Brown basil pesto recipe and double it so we have lots of four ounce servings that can be frozen. I think it should be on the Food Network site. I buy pine nuts from Costco for it but have used walnuts instead (either tastes yummy).
