Hey! Mr. Bug has been doing all of the shopping lately (and getting annoyed with going to the store daily) so I think I can get him on the meal planning bus again.
Today: BBQ ribs with green beans and baked potato
Monday: Blue Apron Basque style lamb and beef piperade

Sunday- homemade mac and cheese with side salads Monday- sausage, peppers, onions and tomato skillet Tuesday- grilled pork chops, corn on the cob and mashed potatoes Wednesday- chicken tikka masala over rice Thursday- tomato basil and mozzarella mini pizzas Friday- bbq ribs and undecided on sides

Sunday: Mac and cheese Monday: Black bean burgers Tuesday: Quinoa salad Wednesday: Black bean burgers Thursday: Mac and cheese Friday: Dinner out Saturday: probably sandwiches, we're going kayaking so whatever is easy for that day
Do you have a green chile chicken recipe cardhard? That sounds yummy!
This is one of my favorite dishes-- I just kind of made it up one night. I cook chicken breasts or thighs in a skillet, then add a can of chopped green chiles, a can of black beans, and a package of Frontera green chile enchilada sauce. Simmer for maybe 5-10 minutes then melt white cheddar cheese over the top. Then serve over rice - it's so good!

iheartbroccoli , do you make your own black bean burgers or buy them premade? Those sound yummy!
We bought them premade this week, at Costco. They're so good! Even my husband (who is not a vegetarian and never will be) loves the black bean burgers!
