I need some inspiration. Hopefully I will get my work life in order soon and will stop scraping together meals at the last minute. I am totally uninspired though. Tell me about your favorite thing to eat/cook.
I love having nachos. It doesn't require a lot of prep time. All I do is saute peppers and onions, brown ground beef, and add sides like chips and salsa, refried beans, sliced avocado, and shredded cheese.
I also make baked rosemary/garlic chicken with fries or sweet potato fries and mixed veggies.

What kind of food do you like?
I love to cook, and some of my go-tos are: - chicken tortilla soup in the crockpot - fajitas - Greek chicken pasta - broccoli chicken casserole - burgers - lentil stew - kale and chorizo soup - cream of tomato soup (homemade) - salmon with mediterranean salsa
Those are a few that spring to mind. If you want any recipes, let me know.
Good ideas. I am not a picky eater but hubs is. He liked pretty bland food. He also does not believe soup is a meal 😱 so that kills a lot of my favorite meals. Unless we eat different things of course.

Not even chili with a side of cornbread or something? It has meat, veggies, and bread. Or tomato soup with grilled cheese?
I hadn't even realized I had listed so many soups until you mentioned soups I love soup, though, so I guess I'm not surprised.
My DH loves sweet food for lunch - something that's pretty common for Germans once a week. I don't consider that a meal. It'll be like potato puffers with applesauce, rice pudding with cinnamon and sugar, unsweetened pancakes with applesauce, etc. When DH wants some of that, I make something else for myself.
I love Trader Joe's preseasoned meats - like the cabernet beef roast or pork loin or whatever. I make a big old chunk of meat, and then we recycle the meat throughout other meals - usually tossing it into tacos or stir fries later in the week. I buy a lot of prepared meals - I don't make a lot from scratch. I will see fresh produce in the refrigerator several days after I buy it and say "Crap! I need to cook this before it goes bad!!" I did this last night with some green beans ...

And how could I forget this? I make this one probably most of all. Since it makes a 9x13 pan, I put it in two 8x8 pans and freeze half for another meal. We actually have one thawing in the fridge now for dinner tonight. Sometimes I add Italian sausage to it, because H prefers it that way, but I like it better without.

tinydancer, it has meat but you can leave it out. I'm more of a play-it-by-ear cook, so take the measurements with a grain of salt (not literally, that would end up salty...)
1 onion, roughly chopped 2 stalks of celery, chopped 2 carrots, roughly chopped 2 medium potatoes, skinned and cubed 5 cups of broth (your choice what kind) 1.5 cups of lentils 2 tsp thyme 1 Tbsp vinegar (1 lb sausage of your choice)
1. Sauté onion in large pot until soft, then add carrots and celery. Sauté for 2-3 minutes. 2. Add broth, lentils, potatoes, and thyme. Bring to a boil and simmer for 20 minutes or until potatoes and lentils are soft. 3. Add vinegar and sausage, heat until sausage is warm.

We do themes around here it seems. Every week we grill, make Mexican, pasta, soup, stir fry and then a casserole/crock pot thing. Currently we are eating a lot of fried eggplant with marinara and noodles and salad. I use chipotle powder instead of chipotle en adobo since I usually have that on hand and it's easier. I also use full fat cheeses, etc, because F nonfat sour cream.

This is pretty much exactly the chicken tortilla soup I make (I crisp tortillas and put them on top = chicken tortilla soup ). The DDs used to eat it, but they kept getting pickier and pickier. Now DD2 doesn't eat it at all. Except for her, though, it is one of our favorites!

I buy the big packs of boneless skinless chicken thighs (you could use chicken breasts as well) from Costco and keep them in the freezer. I'll throw 2 sections of the pack (there are like 6 I think?) into the crockpot with a jar of Trader Joe's Salsa Verde. Let it cook all day on Low. You can have chicken tacos, throw the chicken on a salad, chicken sandwiches, etc. I use the chicken all week! So easy and yummy...
