Monday: We had italian sausage tortellini and steamed vegetables Tuesday: spinach, potato, and sausage eggs with biscuits Wednesday: lemon garlic chicken salad bowl Thursday: Mediterranean vegetable quinoa bowl Friday: fettucini alfredo with broccoli Saturday: beef and broccoli, rice, vegetable egg rolls Sunday: Out with my dad
QOTW: My current go to vegetarian meal is vegetable lo mein. It's super easy, fast, and tasty.
QOTW: I have a few in the lineup that are my go tos.
We call it tin foil fish (any kind of fish, we usually use tilapia, a little olive oil, some seasoning and veggies, wrapped in tin foil packets and baked until done)
Seafood choppino soup (one day a few years ago I threw a few bags of frozen foods from Trader Joe's together and it turned into this amazing seafood soup that is a staple in our house - ill try to post the recipe in a bit if anyone is interested)

I have no meal plan to speak of but I did want to share my favorite vegetarian dish - Veggie Enchiladas! Technically it's vegan but I add shredded cheddar cheese and sour cream. I usually don't make the avacado cream, it's good, I'm just lazy.
