I'm not sure how two car seats should be arranged in our vehicles. One on each side or infant in the middle and toddler on a side? We have a 2007 Escape and a 1997 Expedition. Expedition doesn't have latch. Car seats are a Graco click connect and an Evenflo platinum symphony LX for the toddler. I plan on continuing to rear face C. I'm not installing seat #2 in the immediate future, but I'm trying to plan.
So the 1997 is not going to have a top tether which is required for ff. You are going to want to find out about getting that done at a dealer. If you ask on Car Seats for the Littles group on FB someone can get you the part number . Without that part you cannot ff ever so plan on rear facing until booster or new car otherwise.
You don't really need to worry about latch other than not having that top piece as seatbelt install is just as safe.
I would probably do one on each side in both cars so you don't have to worry about the toddler hitting the baby or passing food or choking items as C gets older. The safest position would be newborn in middle and older child on either side assuming your seats both fit side by side.

Not an expert but we are doing what jesslfar said and having both seats outboard. I'd like to put the NB in the middle seat but C is a crazy little guy and I know he would be getting all up in her business. We also just got a Diono Ranier and the sides are super low so he would have much easier access to an infant seat directly beside him.
You could try putting the infant seat in the middle pre-baby and see how DD treats it. See what toys and things end up inside of it. Evenflo seats have pretty high sides so maybe she will ignore it for the most part, or not really be able to reach it.
obi I think that's what we'll do is both seats outboard. Yes! That Evenflo seat is a beast. If I knew then what I know now we would not have picked that seat. It's a nice seat, but very bulky.
