So I did Fresh 20 last week, but I stalled out after the first three dinners. Partly because I was sick of cooking from recipes and partly because the first three sounded the most appetizing and I wasn't overly impressed with them. I wasn't feeling enthusiastic about cooking the other two, which sounded just meh.
I loved the front end of Fresh 20 where I didn't have to meal plan and I didn't have to make a shopping list. I also like that the list wasn't super long and there were instructions for pre-prepping to cut down on nightly cook time. I didn't love having to follow a recipe every night and I didn't *love* the meals themselves. They were pretty good, but I really felt they needed tweaking. I think the goal of using only 20 ingredients for 5 meals means everything tastes fine, but most could really benefit from a couple more flavor notes.
I think I will end up using this as a regular cookbook for inspiration, rather than a weekly planner. However, it did make me think that I could make a binder of weekly meal plans for myself that is set up in the Fresh 20 style. It wouldn't be much more work than my regular weekly planning and then I could reference them over and over again.

I love that soup! Definitely use really good pickles for it. I like the ones that come in the refrigerated case. I think I always use quite a bit less pickle juice than it calls for. Start out small and add more to taste.

Thanks for the advice! I have a jar of Clausen refridgerator dills I was thinking of using, although I might check the grocery near my office and see if they have some good deli pickles to use instead.

I can share any of the recipes if you want. But I've only ever tried the cauliflower-chorizo burritos and one-pot pasta, both of which are very tasty and easy. When I'm stumped I grab a random cookbook or magazine off the shelf and choose two or three recipes I've never tried.

OK! The recipe is downstairs in a magazine and I'm on my way to bed, but I'll post it tomorrow.
3/4 cup plain greek yogurt 2 tbsp mayonnaise 1 tbsp mango chutney 2 tsp curry powder salt and pepper 1 red apple, sliced 2 cups sliced celery 1/2 cup golden raisins 1/2 cup salted roasted cashews 1 1/4 lb turkey cutlets 1 tbsp olive oil 1 small head red-leaf lettuce chopped
1. Preheat over to 250 degrees. Whisk the yogurt, mayonnaise, chutney, 2 tbsp water, 1 tsp curry powder, 1/2 tsp salt and a few grinds of pepper in a large bowl. Add the apple, celery, raisins and cashews and toss; set aside. 2. Season the turkey cutlets with salt, pepper and the remaining 1 tsp curry. Heat the olive oil in a large skillet over high heat. Working in batches, cook the cutlets until golden brown and cooked through, about 3.5 minutes per side. Transfer to baking sheet and keep warm in oven. 3. Add the lettuce to the bowl with apple mixture and toss. Serve with cutlets.
I picked it because it's easy, but can't vouch for flavour!
Pickle soup update: It was quite tasty, basically a potato-sour cream soup with the flavor profile of potato salad. J tried it when he got home and was not a fan, but my sister and Nugget and my niece all loved it. grumpycakes, your advice was spot on, I only put a little more than a cup of pickle juice and it was perfect. Thanks!

Ok. So it's not healthy in the least. But it's soooo good! It's basically cornbread, corn, bacon, tomatoes, onions, and bell pepper. Mixed with a mayo dressing. Served cold or room temp.
A new friend brought it to the crawfish boil, and it was quite literally the hit of the party. (I mean, right after my chocolate chip cookie dough stuffed cupcakes with brown sugar buttercream topped with 3 mini chocolate chip cookies, obvs.)
