Sunday: Korean beef with rice and lettuce wraps Monday: Corned beef in slow cooker Tuesday: Chicken sausage with veggies Wednesday: broccoli chicken casserole Thursday: I'm traveling so H and A eating out Friday: Sat: Smoked chicken and deer with side dishes undetermined
Sunday: breakfast for dinner (I'm craving Belgian waffles) Monday: homemade Turkey soup and biscuits Tuesday: Kung Pao Spaghetti Wednesday: crockpot fajitas Thursday: healthy chicken parm over kale Friday: balsamic chicken, drunken risotto and some kind of green side (depending what I find that looks good at the store) Saturday: date night with my hubby in Jasper, so something delicious at the Lodge. (My mom is taking M for the night)

I'm thinking salad bar and focaccia bread? Saturday: happy hour with my sister! I'll probably make the boys a pizza before I leave

DH and I haven't done our formal meal planning (because we're being lazy tomorrow), but some things that are on my tentative list:
Broiled miso steak with rice and bok choy. Black bean quinoa enchilada bake. Coconut curry shrimp with some sort of veg. Chicken broccoli alfredo. Pizza (not sure what toppings we're having yet).

musicalsilver here is the recipe. It's not SUPER healthy with the mozzarella and parm, but definitely better than a breaded variety. Sometimes I do it with just some shaved parm and eliminate the mozzarella all together.
Ugh! For whatever reason I can't get the tomato-basil sauce recipe to attach too (for the chicken parm). It's super simple,
Heat a couple tbsps of olive oil in a sauce pan, add 1-2 cloves crushed garlic and sauté until golden. Add 3 tbsp tomato paste and 1-28 oz can of whole Roma tomatoes and a handful of chopped basil leaves. Season with salt & pepper. Simmer for about 15 min until tomatoes start to break down. Using an immersion blender (or reg blender/food processor) process the sauce until smooth.

I always use turkey when I make it! I'm going to try to do lettuce cups and some veggies with it next time and cut back on the rice. I could eat a bucket of that delicious Korean beef bowl.
