Before LO, breakfast on the go was coffee, a granola bar, yogurt and granola, overnight oats in a jar, peanut butter toast, yogurt based smoothies and other things that can be easily eaten on a public transit commute.
Since LO, breakfast consists of as much steel cut oatmeal as I can eat. Obviously, steel cut oatmeal isn't exactly transit friendly food.
I eat a banana, an instant oatmeal and drink a big glass of water. I also eat fruit cups. When I could have dairy I sometime ate a yogurt or drank a chocolate Atkins shake. Following this thread for ideas!
Mm that looks like a yummy recipe! Honestly, I've eaten my bowl of oatmeal in the car so many times. And it is not really a portable food- my upholstery bears the evidence of that. The few days when I've had something different it's been Greek yogurt with kashi go lean in it, or an egg and Morningstar sausage on an English muffin. A tortilla wrap might be more transit-friendly. I'll be following this thread for better ideas!
I like to make smoothies and throw them in a huge cup with a straw. I've made a big mess a couple tines, but it's pretty easy to drink I'm the car. I use almond milk, yogurt, ground flax, handful of spinach, a banana, and some frozen fruit. Once in a while a little scoop of. PB. Having a dirty blender everyday isn't fun, but other than that, it is pretty filling and delicious!
I just found this really great steel cut oatmeal at target that is frozen and you heat it in the microwave, it's delicious. I've been doing that, coffee and a banana and then having an English muffin with peanut butter a few hours later before I pump
My commute is literally 5 minutes, so I just allow myself enough time in the morning to eat something quick before I leave. Usually it's either an english muffin + glass of OJ, or a bowl of cereal.
Anyone ever tried making little egg muffins? Basically, line the tin with lunchmeat instead of paper and fill with beaten eggs, cheese, maybe chopped onions and spinach. Bake. Also, bet you could add brewer's yeast to that easily.
I've been making this on the weekends and heating it up in the morning. I eat it while I nurse DD before she leaves for daycare but I think it would be easy enough to transport.

For my husband, I make big batches of either breakfast burritos or sausage, egg and cheese biscuit cups and freeze them. The burritos are individually wrapped in foil. The night before, I get a couple of the biscuit cups or a burrito out and put them in the fridge to thaw. He can heat them up before he leaves to eat in the car. For the biscuit cups, I basically press some biscuit dough into muffin tins and then fill them with a sausage, egg and cheese mixture. Then, I bake at 375 for ten minutes or so. He loves them! They basically looks like a sausage, egg and cheese muffin.

I have done this and brought in containers of salsa. It is versatile too so you can add whatever meats or veggies. I haven't done this in a while but it is yummy :-)
@songbirdsinging - oatmeal bakes have more of a muffin consistency (without the flour). I personally love them as I don't love traditional oat meal. It's easy to make, healthy & tasty. You just cut yourself a piece and go.
