MEAL PLAN my favorite topic ever

What's for dinner this week, ya'll?

Monday:  leftover turkey chili and salads
Tuesday: Grilled Chicken, oven roasted asparagus, baked sweet potatoes
Wednesday:  shrimp stir-fry with lo-mein noodles
Thursday:  Chicken sausage, mashed potatoes, broccoli
Friday:  Cod fillets, black eyed peas, white rice
Saturday: maybe breakfast for dinner.  But I was also considering lettuce wraps.
Sunday:  leftovers or maybe order from a local seafood restaurant.  They have the best baked crab cakes.

This is my plan for the week, but the last few days are a little iffy.

Monday: maple dijon chicken, garlic potatoes, some sort of vegetable
Tuesday: pot roast
Wednesday: vegetable beef soup (using leftover roast)
Thursday: pork chops
Friday: carryout (probably)
Saturday: TBD
Sunday: TBD

Maple dijon chicken sounds mouth watering.  How do you cook it?

Monday: Taco Salad
Tuesday: Stuffed Peppers
Wednesday: Chicken Avocado Salad
Thursday: Spaghetti Squash and meatballs
Friday: turkey melt roll ups
Weekend: no idea.

Maple dijon chicken sounds mouth watering.  How do you cook it?

I haven't decided yet...this is the first time I'm trying it! Ha ha

I think I'm going to sear the chicken in a pan on the stove after I season it w/ salt & pepper, then coat it with the dijon mustard and maple syrup mixture, and then finish cooking it in the oven. I'm afraid the sauce will burn if I cook it in the pan, and I think our grill is still snowed in!

clarkebar1013, Eh. It was OK.

I think the grill would've been a better cooking method, or maybe just continuing to cook it in the pan after it was seared and covered in the sauce. The sauce seemed to slide off the chicken in the oven, and I didn't get much maple flavor even though I liked the taste of the mixture when I put it on.

I didn't prep the pot roast ingredients for the crock pot this morning, so we're probably having spaghetti tonight.
