I made this tonight. lisasdinnertimedish.com/spinach-parmesan-quinoa/ It was delish. I did make a few tweaks. 1.After sauteeing the onions,garlic, and quinoa, I cooked it in a rice vooker vs. the stovetop. 2. I didn't cook the spinach, just tossed it with the quinoa. 3. I added sliced tomato
Yes, tastes good. I used to always make it without the ham, then one day my cousin made it and she adds the ham... I never went back to no ham after that.

This one is super simple- crispy chicken ranch. You usually have all the ingredients on hand, and most veggies go well with it as a side dish.
5-6 boneless, skinless chicken breasts (can either use large chicken breasts, or cut up into small nuggets) 1 ranch packet 3/4 cups bread crumbs (can sub with corn flakes for a different texture) 3/4 cups parmesan cheese 1 stick melted butter (can use an egg + milk instead of you want to skip butter)
Mix all dry ingredients Dip the chicken into the melted butter, and then roll in the dry mixture until evenly coated Put into a greased baking pan and bake on 375 for 35-45 minutes or until juices run clear ( I would do 25-35 minutes if you cut the chicken into nuggets)
Roasted Parmesan Broccoli Ingredients: 2 cups broccoli, cut into bite-size pieces 1/4 cup olive oil 1/2 teaspoon garlic salt 1/3 cup fresh shredded Parmesan cheese
Directions: Preheat the oven to 400 degrees. Dump the broccoli into a large bowl and drizzle oil on top. Toss broccoli to coat with oil. Sprinkle garlic salt on top and mix to incorporate.
Spread broccoli on a large baking sheet covered with aluminum foil and bake for about 15 minutes, until it starts to turn golden brown (you want it to caramelize, but not burn!).
Dump the broccoli back in a bowl as soon as you pull it out of the oven and mix with cheese. Serve immediately.

I want recipes that I can make in under 15 min. Lol. Or that I can have DH make. Haha. I don't mind cooking at all, it's the time it takes that bugs me. Maybe it's how tiny my kitchen is that turns me off. If I had a gourmet kitchen I don't think I'd mind being in there.

Notes Make sure to completely seal the foil edges so everything stays cooking inside.

Hmmm... Recipes... Those are those things you use to make dinner, right? I wouldn't know anything about that.
Kroger has some mighty tasty pre-cooked chickens though and Whole Foods and Fresh Market are my go to for pre-made sides.
I've been buying Fresh Market prepared fish most of my maternity leave. They're so easy to just throw in the oven and so delicious. During the week I only make something if it can be ready in less than 20 minutes.

Here's an excellent slow cooker recipe for brisket. The only step missing is that at the very end, pull the meat out of the slow cooker and let it rest. While that's happening, skim the fat off the juices in the crockpot, then put in a tablespoon of orange marmalade and crank the heat to high for ten minutes. Slice the beef and serve with the juices. It's from The Art of the Slow Cooker, my favorite crock pot cookbook.

Side note- I got my kids an amish chicken breast, I was thinking about making it for dinner tonight- how would I bake this chicken breast. Its rather small and lean- stick in oven at 350? Yes, I don't know how to make a chicken breast properly- side note I been a vegetarian since I was 16- Its there choice what they eat as they get older- I don't buy them a lot of meat, but I just want my 8 year old to eat= like anything at this point.

I've also done a corn flake coating and it simulates fried chicken but it's really baked. Crush up corn flakes, add some seasoning and then dip the chicken in a beat up egg and dip in the corn flake mixture. Bake it the same way in a sprayed dish until it reaches the right temp.

Shake and bake on a pork chop- any kid will eat this. I made it for my niece and she kept asking for more "steak".
I like grilling vegetables (mushrooms, zucchini, yellow squash) on one of those pans that has the holes in the bottom on low heat. I usually coat them with olive oil, chop up some fresh parsley, and season with salt, pepper.
