My gastroenterologist wants me to eat dairy free for a bit to see if it helps some problems I'm having. I'm also a vegetarian, so I will essentially have to eat a vegan diet. I think I'll be able to do okay with dairy free meals, but I'm not sure about snacks. I don't want to eat a bunch of processed stuff (and a lot of processed food has hidden dairy) but I'm a bit at a loss of what to eat as a snack besides raw veggies, fruit, and nuts. Help?

I'm not dairy free or vegan, but have just been trying to eat healthier. I found that dehydrated fruits are a good alternative if you get tired of eating the raw ones. They taste different and have a different consistency. I bought a dehydrator but you can make them in the oven too. There's also all kinds of crazy recipes out there like black bean brownies and chickpea chocolate chip cookies. I haven't tried them, but I've heard from friends that they are good.
How about nuts/nut butter? Make your own granola bars - oats, nuts, dried fruit, coconut, etc. I found a good recipe for them on allrecipes.com. Homemade popcorn (kernels + oil), olives, hummus, seeds like sunflower seeds, smoothies made with soy milk or almond milk
