Hey ladies...I am tired of eating the same stuff for dinner and always making pasta for LO since it seems that is all he will eat. We usually eat some variety of chicken, veggies and pasta....really boring
Anyone have any good suggestions for easy, but yummy dinners to cook during the week? Share your dinner recipes please!
Lol, I'm in the same boat except switch pasta for peanut butter sandwiches. We've fallen into the trap of DH and I eating real dinner and DS eating his pb sandwich and I hate it. I need ideas too!
Rachael Ray's Florentine Meatballs are a favorite for us and a great way to get some spinach into our diets without a fight from either DS or DH.
I usually only use half of the spinach though because 10 oz seems like overkill. We switch up using ground beef and ground turkey and I prefer this recipe with ground beef, but they're both still pretty tasty. I also only made the sauce for these once, and usually serve them over pasta instead. They're amazing with penne with vodka sauce.
Argh we have fallen into a rut as well. DS likes hot dogs. Toddlers. Pfffft. I love Rachael Ray's Mexican Lasagna (no clicky from mobile but it comes right up in Google). So easy and leftovers are yummy. We also do breakfast for dinner sometimes because C will always eat pancakes. I'll be making those florentine meatballs next week! Also, Real Simple's Pulled Pork (the one with chili powder and cocoa powder) is amazing in the crock pot. It makes a ton so I freeze leftovers for an easy dinner. Can't wait to see what other people have for ideas!
I have a picky eater also. We do a lot of grilling, turkey burgers, chicken, etc. I can't say I have anything up my sleeve except this soup my LO will eat (I made it up, and it's better in the fall). Sauté a white or yellow onion in large pot with olive oil or butter, season with S&P. add a whole butternut squash cubed and a box of chicken broth. I then add Trader Joes frozen super foods (about 1/2 bag) which has kale, quinoa, red pepper, can't remember if anything else). Cook until squash is tender then use and immersion blender to make it smooth. Ends up being a thick soup.
I've done freezer meal workshops and they're pretty cool. I have also wondered about Hello Fresh or Blue Apron. Those intrigue me.
Tonight we did steak and asparagus on the BBB, and rice. Nothing fancy. I want to buy a spiral over to make veggies into "pasta". I think it will rock my world.
fabk I bought a veggie spiraling thing today and hopes it inspires me to be more creative! I love to cook, but at the end of a long workday, my brain hurts and I just cook the same things over and over again.
I made garlicy zucchini noodles last night to go with our grilled chicken and it was delicious! I ruined the first zucchini before I got the hang of the tool. I also made fun carrot "swirls" for LO to snack on today. Well worth the $15 spent for the new tool.

I use Pineterest for inspiration on quick, easy (and for me vegetarian) meals. That being said, LO rarely eats what I make for dinner. She just snacks before and after. About the only meal she'll eat right now is macaroni and cheese! I just try to have snacks that are healthy and that she'll eat (she's on a big cucumber kick, thank goodness).
We all sit at the table for dinner and I serve her even if she won't eat it. Interestingly, she's been into helping make a serve dinner lately. Still doesn't eat it, but it feels like progress, ha ha.
