When I cover up (which I don't do that much anymore, I just don't have the energy to care) I use an Aden and Anais blanket. It's quite large and its light and breathable so I don't steam the baby.
I nurse with baby in a baby carrier and a nursing cover over it. I have the same brand as you, but in muslin fabric. The cover does a good job at covering the sides so baby can't see out and get distracted. I like nursing in a carrier because you can get stuff done, baby doesn't get distracted, and you don't have to find a place to sit down in public.
Have you tried using a nursing bead necklace? I don't have one, but maybe giving baby something different to grab on to might help.
Sorry, I can't really help you with nursing covers since I have almost the same one as you.
Once they get to a certain age (like now), covers are basically pointless from all the squirming/grabbing/etc. I either do the stretchy shirt/scarf trick or wear a denim jacket (if I'm wearing a dress/skirt). The jacket doesn't cover much, but it helps a little and I can take it off and drape it over us if I need to.
But honestly at this age, its just easier for me to take LO to a private, quiet location because otherwise, she'll get distracted and nursing takes 10x longer. I don't normally do that, its easier during this particular stage.
With A&A blankets I usually tie two ends together like a giant bandana or tie a knot in just one corner and slip it under bra strap. It is getting harder with baby wanting to grab it, but I just keep a hand on him with cover over so it covers what I need it to cover. Scarf is a bit easier because the fabric is so thin I just lay it on his cheek
I wear a chewy toy necklace that keeps LO entertained. It reduces him grabbing at a cover (if I use one) Usually I wear a nursing tank so I'm not exposing my whale belly.

I have an Udder Covers brand cover, but mostly use the A&A blankets. For an inexpensive nursing tank forever 21 has tanks for $1.90 that are an easy DIY project.
