Nothing sounds good to me today, but here is our plan: Sat - Leftovers Sun - family dinner at our favorite place in Chinatown Mon - creamy chicken with fettuccine and broccoli Tues - Bratwurst and sweet potato fries which sounds terrible to me but MH requested it Wed - salmon and stir fry veggies with brown rice Thurs - leftovers Friday - one pot ravioli "lasagne" Sat - Anniversary dinner at a fancy restaurant

whosurmomma, I just had a convo with my sister about coking (she THINKS I'm this amazing cook). I told her I jut practice a lot and found some really good recipes. If you wanted to cook I would recommend starting out with a crock pot meal since it is mostly chopping and dumping cans in the pot. Try out the Chicken Tortilla Soup, it sounds really easy and I know for a fact it turns out amazing since one of my friends made it for a staff luncheon.
Red curry shrimp stir fry Broccoli and sausage orrecchiette Cheesy Southwest Rotisserie Chicken tortilla wraps slow cooker chicken noodle soup (will slow cook overnight since I'm gone too long during the day) Slow cooker turkey and sweet potato chili (will cook overnight) Order out (payday tradition)

Have you made the Mexican lasagna before?? I like Mexican and Lasagna, but the combination of noodles with Mexican ingredients seems odd to me.
I've made the lasagna before. Even my brother and sister who are picky enjoyed it. It is absolutely delicious. The noodles don't seem weird in it to me.

MrsEmuTavi thank you!! I have a few meals I like to cook and am good at. I LOVE the crock pot! I think DH and I are in a rut and these recipes can get us out of it and try something new!

It's funny, this morning I couldn't handle reading about the food on this thread and now I'm totally drooling. goldpolkadot Unless we are feeling super ambitious we do a major cheat recipe and do not make the broth. It's not exactly the same, but it's really tasty and so fast and easy to make. We buy the Pacific brand beef pho broth then add thin rice noodles and thinly sliced beef (freeze it a little first so you can cut it really thin). Once those are cooked and you are ready to serve add Thai basil, cilantro, thinly sliced jalapeños, scallions, lime, and bean sprouts (I usually leave the sprouts out). Serve with Sriracha and hoisin!
I'm going to have to check out some of your quinoa recipes, they look yummy!
I'm jealous of those of you with the energy to do this, or just the motivation to do it in spite of your lack of energy. I don't have the self discipline. We went out to dinner last night, my parents took us out tonight, and we're getting Thai carryout tomorrow night. No meal plans for next week yet. I feel like such a slacker now!

I can't even count the number of times we had Thai delivery or frozen pizza my last pregnancy. It was embarrassing. I'm hoping to do better this time but honestly sometimes you just physically can't do it. We can't beat ourselves up about it; you cook and eat healthy as much as you can and do what you have to do to get by the rest of the time!

I'm doing this now so that I can freeze leftovers and when I get to the point where I have no energy I will have frozen leftovers.
