Tzatziki is the best. Maybe I'll do zucchini fritters later this week too, it's one of DH's favorite things but it's so hard to drain the zucchini enough! Any tips? I salt, sit & squeeze but for some reason they're always still a little mushy.

I do the same and I do sometimes find that they are still a bit mushy. They turn out best when I grate the zucchini, squeeze and let it sit on paper towel while I do all my other meal prep plus I make them a bit thinner than I would make other fritters.
